In this video i'm making a very easy recipe for making a naples style 70 % hydration sourdough pizza marinara.
Pizza marinara, also known as pizza alla marinara, is a style of Neapolitan pizza seasoned with only tomato sauce, extra virgin olive oil, oregano,garlic and basil. It is supposedly the most ancient tomato-topped pizza beside margherita pizza :)
Dough recipe:
High protein flour / 00 flour - 1000 gr
Water - 700 ml
Active sourdough starter - 200 gr
Salt - 25 gr
Toppings:
Tomato sauce
Garlic
Dried oregano
Basil
EVOO

awesome thanks for sharing! Is the pizza a bit too close to the fire in the oven? I feel like it could be a bit farther away that way you have more time to bake it through.

I don't know if it's possible or not, can we make tomato sauce for pizza using Indonesian local tomatoes? if it's possible, i hope someday Mas Putra can make a video about it. I'm a new fan for your knowledgeable content 🙌

There are a lot of canned Italian tomatoes available in Indonesia, brand example: cirio or ciao peeled tomatoes, you can use these as your sauce for pizza. Thank you kholif 🔥

How long bulk fermentation? Is it full in fridge or few hours in room temperature and then put it in the fridge?

few hour in room tempt and then fridge, or straight fridge also works but i have thermostat installed in my fridge.

Sourdough like this is pretty much like poolish right? And do you think bulk fermentation at room temp for 8hours would change a lot than go in fridge? I mean, will it make a big difference?
