Bengali's have not tasted non veg food of Andhra, telengana, Tamil Nadu, karnataka and kerala. The preparation are different in each state but tastes yum. You should taste their biryani spicy and tasty. Hyderabad biryani is a class apart. Everybody's favorite is Chettinad cuisine. I am a probashi bengali settled in south. Any day the south thalli is simple tasty and very tasty.

I have been craving for this kind of authentic South Indian food in Kolkata but nothing much is available other than rhe normal idli, dosa and uttapam! So this is treasure found!! কলকাতায় যে কটি জায়গায় আমিষ দক্ষিন ভারতীয় খাবার পাওয়া যায়, Tamarind তার মধ্যে অন্যতম। এখানে আপনাকে ওনারা যে আপ্পাম পরিবেশন করলেন তার সঙ্গে যুগলবন্দী হচ্ছে স্টু। কিন্তু আপনার হয়ত সেটা ভাল লাগবেনা, কারণ এতদিনে যে কোনো খাবারেই ঝাল পছন্দ করার ব্যাপারটা আমরা যেনে গিয়েছি। যাই হোক, এখানে গোড়াতেই যে শুকনো মাংস দেখলাম সেটি আমার খুবই লোভনীয় মনে হয়েছে। বাকি দুটি পদের ক্ষেত্রে এটাই বলব যে এগুলো, যাকে বলে, "acquired taste"। কেরালায় এগুলো খুবই জনপ্রিয় কিন্তু সকলের যে সমান ভাল লাগবে তার কোনো মানে নেই। যেহেতু আপনি পকেটের পয়সা খরচ করে পাঁচতারা হোটেলেও যান, তাই এটা শুধু আপনাকেই বলা যায় যে, ITC Royal Bengalএ একটি রেস্টুরেন্ট আছে দক্ষিণ ভারতীয় খাবারের। নামটা এই মুহূর্তে মনে পড়ছেনা। যেহেতু আমি নিজে সেখানে যাইনি, তাই খবরের সত্যতা একটু যাচাই করে নিলে ভাল হয়। ভিডিওর জন্য ধন্যবাদ 🙏

Could you record the video entirely from the primary camera of your phone which I'm guessing you're using? It is painfully awful to view the parts with lesser clarity. Or at least rub the glass of the front camera.

South Indian cuisine in South India is far more interesting than your regular dosa, uttapam in North India. Visited Telengana & Hyderabad a few times a tried their cuisine it is splendid and the culinary extravaganza is hands down the best. Sambhar with that different taste and with hundreds of chutneys to accompany your dish is just fantastic. One thing Mr Sujoy you pointed out is that the spice angle, to me the amalgamation of different spices of south India makes the dish a little jhal. To me that jhal is just fine as it simply accompanies the overall taste of the dish. Even a simplistic dish with a variety of spices & the touch of curry leaves takes the dish to a whole new level. Still disappointed with the fact that North and even East India are still stuck with the two cliched items like Idli & Dosa portraying that those are the only two items the whole of South India has to offer to the Indian palate 😓

What you can do is... Use a camera stand so that you don't have to hold the camera with one hand and instead hold the mic in one hand like many do! That might help the audio issue and make it sound clearer. Just a suggestion!
