How to make South Mountain Appalachian Style Fried Squash, from picking it in the garden to frying it up in the kitchen, as has been done in Appalachia for over 200 years.
Ingredients are as simple as possible: yellow summer squash, cornmeal, salt, and pepper. (Sugar is optional.)
Fried squash made this way is good as a side dish, or as a snack with a little dipping sauce.

Wonderful! Realize that squash with just the cornmeal coating is a bit plain. If eating as-is, I often use a dip to add a little flavor.
