Just made bean soup with a left over ham bone from the freezer. Basically the same recipe. Tasty especially with the cold rainy weather we are having here in Mich. Great budget meal! Keep 'em coming.

I add green pepper and canned tomatoes to it and use either cayenne pepper or Chinese curry paste to spice it up a little. If he added rice, this would be what they call Hoppin' John. A lot of people in the south eat this on New Year's day for good luck.

Love your cheap meal series. We basically make this same meal but the wife uses 4 or 5 bean mix and adds a grated carrot. The carrot is the key to taking bean soup up a notch. Also try a smoked Ham Shank, more meat less gristle

Believe it or not, this reminds me of a lot of traditional Chinese soups which use black eyed peas as a base. You're definitely making something that has stood the test of time enough to become a cultural staple!

Back in the day, purple was just a shade of red. It wasnt considered a different color. Same as orange, that was just a shade of yellow.

Throw sliced red onion in a jar with some salt, vinegar, and and smaller amount of water than the vinegar you used, make sure all the onions are covered. Let it sit in the fridge at least a day or two. The juice will not be purple. It will be red. You're welcome.

They're probably called red onions because of 2 reasons. 1. Their peels were used back in the day to make reddish dyes 2. Back when the printing press was first introduced, prints were priced by the letter. This is also one of the reasons we dropped extra vowels from a lot of words in the English language. Like how "colour" became "color"

This is the only "struggle" meal I've seen made regularly by others. I was introduced to it as a meal for good fortune for the New Year, and I'm lucky enough that my love really loves hamhocks herself. But man are hamhocks a little tricky to find. Overall this is the basics of a good stew (or soup?); a solid meat broth with lots of fat and collagen melted into it, with beans for starch to thicken it up even more.....a "stick to your ribs" kind of hearty with virtually 3 ingredients needed to add to a pot of water. Simplicity itself, and dang if it doesn't taste good. Could even be pushed further with a couple cut-up and browned bits of ham steak for extra protein. Or maybe even another veggie, add some Okra.

We have a pretty similar dish in the UK, except using Split Green Peas as opposed to Black Eye Peas (although I'd assume they were a kind of bean). Split peas are really cheap and used in a number of cheap dishes like Mushy Peas or Pease Pudding (which is a cheap tasty meal, ideal with crispy bacon). Out of interest, what is the difference, at least as far as the US goes, when it comes to peas and beans?

From an online article on AgNet West.... "Peas and beans do look very similar and fall under the general seed family, but they aren’t the same. Peas are generally round while beans have a wider variety of shapes. Color also varies considerably with non-pea beans. Peas don’t usually vary that much in color - they’re mostly green. The stem of a pea plant is typically hollow, while beans have a solid stem structure. Arguably the biggest growing difference - and the most important for gardeners - involves the temperature requirements of each plant. Beans typically prefer hot, summer weather. They’re extremely frost sensitive and fail to produce when nighttime temperatures drop significantly. Peas, on the other hand, grow best in cooler temperatures. In the kitchen, there’s a marked difference between how beans and peas are handled. Peas being more delicate are usually frozen because they spoil a lot faster than beans. Beans, like kidney and pinto beans, require a long cooking period once harvested. They’re preserved by drying and require an even longer cooking time once dried. Beans can also be eaten fresh or dried, though they should be cooked thoroughly as some beans contain toxins which affect the digestive system (kidney beans in particular). Some peas, on the other hand, are delicious eaten raw-snap and English peas in particular."

Here in Canada, canned pea soup (sometimes made with ham) is widely available. Oddly, I have never seen it "fresh", either homemade or in a restaurant.

At least here in northeast Okla, the Homeland stores carry smoked ham Shanks, for about a 3rd of the price but 3 times the meat as ham hocks. 3 large shanks run less than $1.75. Needless to say, we have a bunch in the deep freeze for when stocks run low. btw, Black Eye Peas are awesome!

My local Dollar Tree store sells bags of several different dried beans and lentils. They are cheaper there than in a regular grocery store so that could save people a little money with the purchase of the ingredients for various soups.

We ate bean soup a lot. It wasn't until I was a teen that I knew that most people put onions, carrots or ham bones in it. I guess what we had was cooked beans in broth made with bacon grease we got from grandma.

Those meals look delicious... And because money is tight now I look for some cheap and nutritional meals. It is unfortunate that I cannot eat any beans or peas because of health issues... If your health issue is not due to allergies, have you thought about putting the beans in a blender, once cooked? Then it would be smooth. I hope you're able to find a solution.

Some ideas that might help: If it's a problem with digesting beans & not an allergy to all beans there's ways to make them easier to digest. Presoaking &/or cooking with kelp, ginger or epazote makes beans easier to digest. Pureeing the beans after they're cooked might help also. If you can eat lentils &/or split yellow or green peas try cooking the ham hocks longer in the 1st step then use lentils or split peas. Split peas (yellow or green) will take more water & swell up in cooking more than the black eye peas do. If it's an allergy it could be to all legumes (which probably includes peanuts) but it's also possible to be allergic to some beans but not all beans. Also if you're allergic to any grain especially wheat &/or corn grains & beans are often harvested, transported &/or processed with equipment used to process grains resulting in cross contamination causing reactions. If you can eat brown rice you could make this with brown rice instead of beans. If you add more water than you usually cook rice in & stir while it's cooking it will end up making a thicker liquid similar to the beans. Since brown rice cooks faster than beans cook the ham hocks longer before adding the brown rice. If it's not as thick as you want when it's done cooking mash a little of the rice to release more starch. I hope this helps.

@WinterWerewolf my husband is a Type 1, so the beans, lentils, and rice meals are very tricky for him to eat, and he can't have much on the rare occasion he tries some. As he's getting older (53) his blood sugar will go high and stay there for a stupid-long time, and of course, insulin is way-expensive. :/ Take care of you as best you can, whatever your ailment, and I hope you find your best nutrition. :)

I use twice as much black eyed peas and then add a stick of butter at the end. If I need to stretch it even more, I will add a can of cheap biscuits chopped into quarters for easy dumplings and a can of VegAll. This meal gets better over night and makes a terrific lunch the next day served as a topping for cheap hotdogs. This will make about 25 servings for less than $10. Keep the frugal recipes coming!

I absolutely love these videos. I too love black eyed peas, they are really good. Pro tip with the ham hocks. Wrap them in some cheese cloth and take them apart just before serving. That way all those little bones don't cause problems when eating. IF you happen to have one, cooking this in a dutch oven on the stove at very low heat for several hours is the way to go!

My grandmother grew up during the Great Depression of the 1930's and she would cook blackeye peas with ham hocks... and to go with her blackeye peas...she would make "hot water cornbread." The recipe is simple, into a bowl, add dry yellow corn meal and hot boiling water, mix until well blended and hand form patties and add BUTTER to a skillet, heat that butter until melted and then add those corn meal patties to the skillet, when one side is nice and brown, flip those cornbread patties and brown the other side and serve with those blackeye peas...and there you have it...hearty hot water cornbread patties to go with those blackeye peas...DELICIOUS...loved the video Larry and thanks...R.I.P. my grandmother Georgia Harris-Pate.

I cook for two elderly neighbors (92 and 85) as well as my wife and I. A couple weeks ago, I made my version of your recipe with canned beef and honestly, they were less than excited about the menu. That is, until they tasted it. It is a great dish.

I'll use a Walla Walla Sweet Onion, which were brought over originally from Corsica, near Italy, by a Frenchman. The name Walla Walla(pronounced: Wall - uh Wall - uh) is a native american name meaning many waters, it's really quite a mix for one thing. Idk why I went in to all that detail but hey, there it is.

Hell, this is one of my family's favorite meal even during normal circumstances. Except we use navy beans and throw it all together in a crock pot. Also I grew up near Walla Walla Washington where there's similar soil characteristics to grow sweet onions.

Fun Fact: *Vidalia Onions are sweet because the really low amount of sulfur in the soil where the onions are grown. Also they can only be called a "Vidalia Onions" if they're grown in one of 20 counties surrounding Vidalia Georgia due to the designated Vidalia Onion Act of 1986. Furthermore Vidalia Onions was named Georgia's official State vegetable in 1990.* There you go on a little information about my State of Georgia.

Here on the west coast, we can get Walla Walla onions which are pretty much the same as Vidallas. I don’t think that they are protected by origin.

@@morrismonet3554 yeap. If stored properly and right condition a sweet onion like a Vidalia will last 1-2 months. A regular onion stored the same way can last up several months to a year maybe.

Your Chinese cooking videos are a hit at our house, and offer a great alternative to take out, especially with the latest prices. Everything was going smoothly until I watched your video on asparagus on toast......I thought to myself what is he thinking???? Well, I tried it tonight, exactly as shown. It is absolutely delicious! Thank you! Yes, I know some selfish glutton will say, “I can eat the whole pot!” Ignore them. They’ve never stood in the grocery store counting pennies, after hunting down discarded soda cans to return, to buy food for their hungry children! And yup, ham hocks sure look funny, but there’s meat and fat on those trotters! Plenty to flavor a pound, maybe even two pounds of any beans or peas. And, if you’re truly desperate, hot dogs work really well!

I have returned my cans for refunds and I have counted pennies in a supermarket, and I still know he makes the serves tiny so he can use lower prices in his thumbnails for clickbait. People shouldn't be shamed into thinking they can survive on servings this small.

I just made a big pot of split pea soup with a smoked ham hock added, cheap, easy, and delicious. About $4 made ten servings, not really meal-sized but certainly nice with a meal or sandwich.

Perfect dinner. My parents would make this often with carrot and celery from the garden. A little chopped raw onion on top, and a few dashes of Texas Pete. I know what's for Sunday dinner!! Thanks Larry. Love these meals. Parts of my childhood when you're parents would make ends meet, and give the children food memories

This is just Hoppin John. Which isn't a bad thing, it's delicious. We usually serve it over rice and will eat it for dinner one night, then I end up with lunch for work for another couple days.

No, Hoppin' John is a bit different..... "Hoppin' John, also known as Carolina peas and rice, is a peas and rice dish served in the Southern United States. It is made with cowpeas (mainly, Black-eyed peas, Sea Island red peas in the Sea Islands and Iron and clay peas in the Southeast US) and rice, chopped onion, and sliced bacon, seasoned with salt.[1] Some recipes use ham hock, fatback, country sausage, or smoked turkey parts instead of bacon. A few use green peppers or vinegar and spices. Smaller than black-eyed peas, field peas are used in the South Carolina Lowcountry and coastal Georgia; black-eyed peas are the norm elsewhere."

Grew up eating ham mocks and hog maws... It was probably the cheapest protein in the supermarket.. Not so much lately.. At Least in my neck of the woods... Along with chicken feet.. My mom would stew up a pot when she couldn't afford other chicken parts..its considered a delicacy today, along with their prices...

Sup Larry, great recipe, hocks give the best broth, love black eyed peas, these days even as executive chef I'm making all kinds of bean soup, even pea soup, lentils ect.. with 11 people in house and kids out of work I find ways to stretch my salary, grandkids love soup so a win, can't wait for garden to provide, add veggies, Chiles ect.. or even tomato soup ect . A good grilled cheese with any soup is a winner. Tyvm for what you do for us the people

This is a delicious soup. I make it often with smoked sausage also; and if you have any greens, kale is nice but you can also use things like radish greens, I like to wilt those into the soup for a little extra flavor.

That same recipe could be used with any bean. And if you have any whilty carrots or celery add them too. My favorite is using split peas.

I had this on ship back in the 90's, but the hocks weren't done very well. The Navy always had some pretty decent cooks though and I even had to contribute for a few months during school. Galley Nights was the best shift, which allowed us to raid all the different walk-in coolers of whatever we felt like eating.

My ship's cooks were all either Yankees or Filipinos. They once tried to pass off Cream Of Wheat (which I loath" to us Southerners as "grits"! Huge difference. What I told the Filipino cook nearly got me knifed! 😳

I’ve been eating black eyes my entire life. Didn’t even know they were cheep, just a southern tradition! Pan fried cornbread fritters, bacon or ham, some white rice, collard greens, heck that’s just how we eat down here!

Living on a struggle budget because my job let me go after things looked okay after the hurricane. Now I'm stuck in another state, eating bean soup everyday trying to get my boyfriend to come up here to live with me. (He's coming don't worry) but my safety net only covers my rent for two months and no room for anything else! Had to hit up mom to send me some foodstamps and cash for a electric bill. Throw a egg on top for extra goodness
