Shrimp and grits is a classic Southern dish from the United States, especially popular in the Lowcountry region of South Carolina and Georgia. It's a comforting combination of creamy, buttery grits served with sautéed shrimp in a flavorful sauce. Here's how you can make it:
Ingredients:
#### For the Grits:
1 cup stone-ground grits
4 cups water or chicken broth
1 cup milk or heavy cream
2 tablespoons butter
1 cup shredded sharp cheddar cheese (optional)
Salt and pepper to taste
#### For the Shrimp:
1 lb (450g) shrimp, peeled and deveined
4 slices bacon, chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup chicken broth or vegetable broth
1 tablespoon lemon juice
1 tablespoon hot sauce (optional)
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional, for spice)
1 tablespoon butter
Salt and pepper to taste
Chopped parsley or green onions for garnish
Instructions:
#### 1. *Cook the Grits:*
In a medium pot, bring the water (or chicken broth) to a boil. Gradually whisk in the grits to avoid lumps.
Lower the heat to a simmer and cook, stirring occasionally, for about 20-25 minutes, until the grits are tender and creamy.
Stir in the butter, milk (or cream), and shredded cheese (if using). Season with salt and pepper to taste. Keep the grits warm while you prepare the shrimp.
#### 2. *Prepare the Shrimp:*
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
In the same skillet with the bacon fat, add the chopped onion and cook for 2-3 minutes until soft.
Add the minced garlic and cook for another minute.
Season the shrimp with paprika, cayenne pepper (if using), salt, and pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
Add the chicken broth, lemon juice, hot sauce (if using), and butter to the skillet, stirring to deglaze the pan and create a sauce. Let it simmer for 2-3 minutes to thicken slightly.
#### 3. *Assemble the Dish:*
Return the cooked shrimp and bacon to the skillet, stirring to coat them in the sauce. Cook for another minute to warm everything through.
Spoon the creamy grits into bowls and top with the shrimp and sauce mixture.
#### 4. *Serve:*
Garnish with chopped parsley or green onions and serve immediately.
