On this special day of Eid, we bring you Mansoorah's Special Eid Badaami (Almond) Chicken Biryani. It is indulgent, fit for a royal treat but extremely easy to make. Happy Eid to everyone!
Ingredients:
- 700 g par boiled basmati rice (boil with cardamom and cinnamon)
- 600 g chicken pieces
- 1 tbsp salt
- 1 tbsp ginger & garlic paste
- 1 cup of carnation milk
- 1/4 cup of yoghurt
- 3 tbsp ghee
- 3 tbsp oil
- 2 big chopped onions
- 1 cup fry onions
- 1 small piece of cinnamon
- 1 tsp of elati (cardamom) powder
- 1 cup of almond paste
- 1/2 cup of infused saffron, mixed with 2 tbsp of almond paste
- 1/2 cup of infused saffron
- A few bay leaves
- Drizzle of honey
- Handful of roasted almond flakes and raisins to garnish
Method:
- Marinate the chicken in salt, infused saffron, ginger, garlic, carnation milk and yoghurt for at least 2 hours or over night.
- Heat the ghee (keep some to sprinkle on rice at the end) and oil. Braise the marinated chicken until tender. Drizzle some honey. Remove from pan and keep aside.
- In the same pan, add bay leaves, cinamon sticks and cardamom pods. Add in onions.. Allow to roast. Stir in the almond paste, cinnamon, along with the some of the chicken.
- Mix in the fried onions and cardamom.
- Lower heat, add some water and let simmer.
- Layer half of the par boiled rice.
- Layer the remaining cooked chicken.
- Sprinkle the saffron and almond paste mixture.
- Sprinkle fry onions
- Layer remaining rice.
- Sprinkle some saffron, ghee and fried onions.
- Garnish with roasted almond flakes and raising.
- Serve with raita and pickles!
