This is the recipe i used! 🍌 Banana Bread Recipe Ingredients: 3 Bananas (or more) 8 Tbsp Butter 3/4 cup Sugar 2 large eggs 1 &1/2 cups of all purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp vanilla extract Instructions: 1. Preheat oven to 350 degrees F 2. Cream butter and sugar 3. Mash bananas then add eggs and butter sugar mixture 4. Add dry ingredients, mix together 5. Pour into loaf pans and back for 55-60 mins 6. Let cool and enjoy.
Good recipe. I've added chocolate chips and chopped walnuts or macadamia nuts. Instead of bananas you can sub shredded carrots or zucchini and frost it with icing made with powdered sugar and water or softened butter.

Amanda, here's another suggestion for overripe bananas. Make a peanut-butter banana smoothie! All you need is one banana and a half cup peanut butter, a half cup of almond milk, and some ice cubes. "Some because it depends how thick you like it. The more ice cubes the thicker. Blend everything together and....smoothie! No need to add sugar. Makes about a cup and a half. Of course, you can double the recipe if you want a larger serving (like a Starbucks Venti). You can also get peanut butter powder (Safeway, Longs, GNC) and use 3 heaping tablespoons per banana. If you have a LOT of leftover bananas, you can actually cut them up and freeze them for later smoothie use.

I don’t add sugar to my banana bread, especially, if it’s very ripened bananas due to the added sugar in ripe bananas. Great idea with the added seeds and bananas on top.
