Ingredient:
2 Pork Tenderloins (about 1 pound each)
Kosher Salt
Let them set out for 15-30 minutes
Spice Mix:
½ teaspoon ground Cumin
½ teaspoon ground Coriander
½ teaspoon ground Ginger
½ teaspoon Black Pepper
¼ teaspoon Smoked Paprika
¼ teaspoon ground Cinnamon
Dash ground Cloves
Dash ground Allspice
Dash of Cayenne Pepper
2-3 Tablespoons Honey
In bake pan, add
3 Tablespoons Olive Oil in pan and to coat vegetables.
8 Baby Potatoes
2 Carrots, cut into 2-inch chunks
1 Red Onion, roughly chopped
2 Bell Peppers (color of your choice, I used red and yellow)
8 oz. Whole Mushrooms
Garlic Salt & Pepper for Vegetables
Bake at 350 F. for 30-35 minutes (145 internal temp.)
Flip meat and BROIL until color forms.
Remove meat to rest; continue to bake vegetables at 450 F. until tender.
