Spicy Garlic Dipping Sauce: Tirk Trey Koh Kong (Seafood Chili Garlic Fish Sauce)

In Cambodia, this spicy garlic fish sauce is commonly called tirk try Koh kong. I grew up eating this with grilled meat and seafood and we just call it tirk Trey mtas bok. Similar to a hot sauce or chili sauce, this spicy and flavorful condiment is often served with various Cambodian dishes and it’s one of the most basic cambodian household dipping sauces.
This recipe is for one whole garlic bulb and will last about a week in the fridge. For smaller one-2 serving portions, Reduce the ingredients shown here to half.
- 10-15 southeast Asian hot chilies (adjust to your desired level of spiciness)
- 1 tablespoon sugar to help paste the chilies
- one whole garlic bulb, peeled
- 3 tablespoons sugar (adjust to taste)
- 1 teaspoon salt
- 1 teaspoon msg (optional)
- 2-3 tablespoons fish sauce (Tirk Trey)
- 4 tablespoons fresh lime juice (I added another tablespoon since I like mine more sour)
- you can also add 2-3 tablespoons water to dilute the sauce
Taste and adjust the ingredients as needed. You can add more fish sauce, lime juice, or sugar to balance the flavors to your liking.
- i also like adding this to melted unsalted butter for my seafood dip.
Instructions:
1. Start by wearing gloves or be very careful when handling chilies, as they can be extremely spicy and can irritate your skin and eyes. You can adjust the number of chilies based on your spice tolerance.
2. In a mortar and pestle or a food processor, finely crush or blend the chilies and garlic together until they form a coarse paste.
3. Add fish sauce, fresh lime juice, sugar, and water to the saucepan.
4. Taste the sauce and adjust the seasoning as needed. You can add more fish sauce, lime juice, or sugar to balance the flavors to your liking.
You can use Cambodian crack sauce as a dipping sauce for grilled meats, seafood, or as a condiment for various Cambodian dishes. Remember that it can be quite spicy, so use it sparingly if you're sensitive to heat.

I don't like hearing it called crack sauce. I just call it thuk machu matheh.🌶️🍋🧄 This sauce is great on seafood. 🦐🦞🐟🐠🦑🐙🦪😋🤤👍🏽

In order for it to be tuk Machu, it would need tamarind. This I think is just called tuk trey p'aim
