Spicy Miso Carbonara Udon in 15 Minutes

Make this Spicy Miso Carbonara Udon in just 15 minutes! These noods are SPICY, CHEESY, CREAMY, and CHEWY mixed in with that CRISPY BACON. You'll be left wanting more!
Serves 2
Ingredients:
2 pack frozen udon
1 full egg + 2 yolks only
3 cloves of garlic minced
1 cup grated/shredded parmesan cheese
1/2 tsp black pepper
2 tbsp miso paste
1 tbps gochugaru (adjust to taste)
4 slices of bacon cut small
1 cup udon cooking water (you may or may not use)
Garnish: chopped scallions and furikake
Instructions:
1. In a bowl combine eggs, parmesan, minced garlic, black pepper, miso paste and gochugaru. Mix it together using both a stirring and mashing motion.
2. Cut 4 slices of bacon into small bite size pieces.
3. Fry the bacon until crispy in a large pan.
4. While the bacon is frying, cook your udon noodles per package instructions.
5. Reserve a cup of the udon water just in case you need to adjust the consistency of your noodles.
6. Once udon noodles are cooked put them directly into the pan of the crispy bacon and mix well coating the udon in the bacon and fat.
7. Add in your sauce mix and on low heat stir in the sauce with the noodles until you reach your desired consistency but make sure not to scramble the eggs. The sauce should be creamy so if it's too thick you can add the reserved udon water 2 tbsp at a time until you reach your perfect consistency.
8. Plate and garnish with some furikake and chopped scallions.
9. Enjoy!

Hi Mai! I made this tonight for dinner. It was so delicious! A little more on the saltier side so I’m not sure if it’s the miso paste I used... wondering if I could use 1 tbsp next time instead of 2. Thanks so much for sharing! 😋

Hi!! Thanks so much for trying the recipe! Yes, you can use less miso paste. I also used white paste instead of red because it’s less salty. Not sure which one you used but thought I’d let you know 🥰

Hi, I just tried this recipe using white paste miso. It was super salty, I think 1 cups of parmesan is too much? I had to add a lot of the udon water and sugar to reduce the saltiness
