Food Busker’s bringing a Brazilian vibe to London’s Camden Market with this delicious spicy chicken recipe. Marinated in a chilli sauce with charred red peppers, lemon and coriander this juicy spatchcocked chicken is a real show stopper. Serve with a fresh Aji Sauce made from yogurt, lime, chilli and lettuce and it’s carnival all the way with this colourful and punchy dish.

I'm from Brazil and never see or heard about this. But it's a nice way to cook our "Frango Assado" or "Frango Grelhado" (if you google these terms you'll find our real normal Brazilian chicken). Nice job!

I'm brazilian, I'm 27, a professional cook for 2 years, and a barbecuer for my entire life, and if there is a dish that is NOT brazilian is this one here. I'm sure the taste is pretty much ok, but, NOT BRAZILIAN AT ALL!

really creative. not even close to any brazilian dish though besides garlic and coriander. We have no jalapenos and habaneros, spring onions.... nope, no lettuce in sauces....We have a green mayo but each family has it own recipe that variates from mayo with coriander, parsley and chive... Sorry.... But looks really delicious anyway :P

Trying this today; girlfriend doesn't like spicy so I'm only using fresh green chilis in the marinade and sauce. The marinade is eye popping with flavour and aroma as you say. Mine came out much more runny as yours used dry chili. The sauce after I'd love to use thai and habanero chilis but it would be nightmare hot (my favourite). ...will update...maybe.

We do have these opened up chickens marinated dishes made in barbecue grills here at Brazil, but all these peppers (which, by the way, probably taste amazing) are very hard and pricy to get here, so these ingredients are kinda weird for us.
@FreqBand
@FreqBand 4 года назад
Spatchcocking tip, to get it to lay really flat. .......after you have removed the wingtips and backbone, lay it inside-up (skin side down). Find the breastbone and take your heavy knife, and give it one semi-firm downward whack, halfway through the breastplate, cracking it. Bend it flat with your hands. Also, break the leg/thigh knuckle.... Firmly grab the leg with one hand....and grab the thigh bone with the other, and bend it upwards hard until you hear a "snap" at the joint. This not only helps it lay flatter, but also allows the thigh to cook quicker. Do both sides, obviously.

@carloshulsen 8 лет назад
