Recipe : Spicy, Sweet and Sour Brinjal
Ingredients
500g brinjal
1.5 tsp turmeric powder
Oil for frying + 2-3 tbsp oil
1 sp mustard seeds / mixed spices
0.5 cup onion
0.5 tsp ginger + 0.5 tsp garlic paste
5 dried chilies
1 sprig curry leaves
2-3 tbsp chili powder
Lime size tamarind diluted with 1 cup of water
salt
1 tbsp brown sugar
Method
1. Mix brinjal with turmeric and salt. Deep fry and keep aside.
2. Heat a pan with oil. Add mustard seeds/ mixed spices. Stir till you hear the pop sound from mustards.
3. Add onion, ginger and garlic paste. Sauté for a minute.
4. Add dried chilies and curry leaves. Stir well.
5. Add fried brinjal and chili powder. Let it simmer for a minute.
6. Pour tamarind water and season with salt. Cook till the gravy is thick.
7. Add brown sugar and stir till all well combined. Off the flame and enjoy.
