Achari Vegetable Pulao
Ingredients:
Oil 3 tbsp
Whole black pepper 1 tbsp
Black cardamom 2-3
Star anise 2
Cumin seeds 1 tbsp
Onion (sliced) 1 cup
Ginger garlic paste 1 tbsp
Carrot (diced) 1 cup
Potato (small cubes) 1 cup
Peas 1 cup
Cumin powder 1 tbsp
Red chili flakes 1 tbsp
Coriander powder 1 tbsp
Salt 1 tbsp
Yogurt 1 cup
Water 1 cup + 5 cups
National Crushed Pickle Mixed 2 tbsp
Soaked rice 3 cups
Directions:
1. In a pot heat oil and add whole black pepper, black cardamom, star anise, cumin seeds and cook for a minute.
2. Add onion and cook until light brown. Add ginger garlic paste and cook for a minute.
3. Add carrot, potato, peas and mix it well. Add cumin powder, red chili flakes, coriander powder, salt and mix it well. Add yogurt and cook for 4-5 mins.
4. Now add 1 cup of water and cover and cook until veggies are fully done. Add National Crushed Pickle and mix it well.
5. Now add 5 cups of water and bring it to a boil. Add soaked rice and cook until 80% water dries out.
6. Now cover and steam over low flame for 10-12 mins.
7. Dish it out serve. Your Achari Vegetable Pulao is ready.
