Amazingly Delicious Thai Red Curry
With healthy plant-based ingredients

1 lb (453 g) tofu
1 lb (453 g) bamboo shoots
1 eggplant
8 oz tempeh
1 cup vegetable stock
400 ml coconut milk
1 tablespoon brown sugar
2 tablespoon vegetable oil
1 tablespoon red Thai curry paste
2 large garlic cloves minced
3 shallots
2 stalks lemongrass (only use the bottom half of the stalk/soft part)
1 galangal
8 kaffir lime leaves
3 large chilies, seedless
3 small red chilies
1 cup fresh Thai basil
Salt
Pepper
Optional:
2 green chilies (for garnish)
2 large red chilies (for garnish)
Suggestion:
Served with jasmine rice
