It also works the same with extreme heat. The heat will evaporate the sweat from your skin, resulting in the same gas barrier. But is maybe less forgiving than the nitrogen. Moral of the story, you aren't in immediate danger. Just don't take a bath in liquid nitrogen or lava
Basically the temperature between the nitrogen and her hand has so big difference, that the nitrogen liquid just creates small gas layer between them and the rest of the liquid just bounces and drips off. This don't mean that you can put your hand into the canister tho, but you can see the same effect if you drop cold water on hot stove or frying pan.
That's actually really interesting to see the leidenfrost effect works both ways I only discovered it while watching a daily dose of internet video a while back when a guy splashed his hand through molten metal, It actually makes sense that it would work both ways I was just dumb and thought something to do with the fact that we are made of water and liquid nitrogen is way below the freezing point of water Thank you for explaining this!

They make a type of glove to wear when handling nitrogen. Definitely don’t want to wear latex gloves. With no gloves on a little bit in you hand will cause the liedenfrost affect. Dumping a lot on your hand and you are screwed.
