SPRING ROLL DOUGH - LUMPIAS.
Hello everyone! In today's video I show you how to prepare the dough for spring rolls or lumpias. This dough can replace the phillo dough, filling it with the filling of your choice, sweet or savory.

Spring roll dough.
Yield: approximately 12 sheets.
Ingredients:
200 grams all-purpose wheat flour (1 ¾ cup).
120 ml. water (½ cup)
¼ teaspoon salt.
Cornstarch or cornstarch.
Vegetable oil.
Preparation:
- In a bowl place the flour and salt and stir, then add the water at room temperature.
- Integrate well until a dough is formed, place it on the table and knead until it is smooth and elastic, five to eight minutes.
- Let it rest in the same bowl covered with a kitchen towel or plastic wrap for 30 minutes.
- Form a roll with the dough and cut equal pieces, you will get 10 to 12 pieces.
- With each piece form a ball, rolling it between the palms of your hands.
- Flatten each ball with enough flour on the table, to form discs they all have to be equal, of the same diameter.
- Then with the rolling pin and enough flour on the table stretch each piece individually, they should be about 3 millimeters thick, they all have to be of the same diameter.
- Then paint with oil each disk of dough and sprinkle them with cornstarch (cornstarch), place five to six disks for each tower, the top one you do not paint with oil.
- While you work the towers of dough discs, cover them with a kitchen towel.
- Place one of the towers of dough disks on the table well dusted with flour, stretch them with the rolling pin a little more, until they are the size of the pan where you are going to cook them, but not bigger.
- Heat a frying pan over medium heat and place the tower of dough discs, twenty seconds on each side (approximately), so that the dough dries a little.
- Place it on a plate and cover it with a kitchen towel and let it cool.
- Carefully separate each sheet of dough, they are very thin.
- You can trim the edges or you can keep them in the refrigerator in a plastic bag.
- If you are going to freeze them, roll them in baking paper, sprinkle with a little starch and then in a plastic bag.
