Yes there has to a termination point, I believe recursive CTEs naturally terminate after 1000 recursions but this can be changed. Its the same with looping, unless there is something to end the loop it will keep running.
Not when you don't need to, nvarchar allows you to add unicode characters, if those will never exist in the data, there's no need to use it, that will just cost you storage
