Recreate your palate with this fantastic recipe of intense seafood flavor.
It is typical to find them in the bars in Spain as a tapa. If they are served as a main dish, it is typical to serve them with boiled rice. Both foods combine perfectly. If you try it, let me know.
Another variation of this dish, which for its interesting texture and flavor has become one of the most prized tapas of Spanish gastronomy are the croquettes of baby squid in its ink. If you really think you want to make the croquettes, I recommend you to make more squid and, if you are not going to make them right away, freeze them. Once thawed, they will be perfect for the croquettes.
If you want a tip, do not remove the skin. With it you will get even more flavor.
The squid ink, although you can also use cuttlefish ink, greatly enhances the flavors of the squid. So get ready to experience an explosion of flavor in your taste buds.
As for the salt, I recommend not to use it. If you have noticed, I do not even include them in the ingredients. Think that both the squid and the ink are already salty by themselves. It is better to make them without salt and, if at the end you think it is necessary, add the salt you want, but do it when the sauce is already concentrated or you may get a surprise.
Do not be scared by the amount of baby squid that I recommend. Think that, once cleaned and cooked they will be in nothing. Watch the video of the recipe. What is in the pan is 2 kg.
You can use bigger squids than the ones you see in the video. They will be easier to clean, certainly, but I think it is worth choosing the small ones even if it takes longer to prepare them. If you choose larger ones, you will have to cut them into slices or small pieces. Think that this is a dish that part of its grace lies in picking up the little pieces soaked in sauce without having to cut them.
Regarding the cleaning of the baby squids. There are many people who, if they choose small ones, do not clean them inside. This is an option, although the fact of cleaning them by removing the teeth and the contents of the inside of the bag will make your dish much more pleasant to the palate.
