Stamna Pie 

What might you ask is Stamna pie ? Well, many years ago on a holiday in Corfu we came across "Stamna" on the specials board of a lovely restaurant. It wasn't a local dish, it was the work of his British wife, combining the idea of a casserole and the local spices. It is very similar to stifado but had extras like green beans and cheese on. Now I've taken a nod to that dish and stripped it back as a pie filling, tweaking ingredients for things like miso for flavour rather than a stock cube, lentils to thicken rather than flour, but still getting that same flavour profile and the big warm hug it gave us that first time.
