You knew there is Jabba and even Carbonite Solo in Jabbas Palace? Also, to tame Baby Yoda you need a stew wich is nearby of where Baby Yoda is captive. It is literally in that hut from episode 1 The Mandelorian You need a saddle to use the speeder. And you can actually wear real Mando-Beskar-Armor, search in creative Mode at armor and take some

About the Beskar, the Mandalorian smiths are the only ones who can forge beskar to its best form. Light and extremely durable. But the mandalorians don't wear it in ways that it prohibits movement. They are just as flexible with their armour as with other clothes.

For horses, you need to click them with your hand free until hearts appear. That shows you tamed them, after that you need a saddle, you can only find that for some reason, not craft it. Then just click on the horse with thr saddle and click again to ride, when it is tamed without a saddle it moves where ot wants but you can still be on it.
