You should have also covered how they were a fighting race before the Cartel business. They were known to be surprisingly fast even with their huge bodies. Their skin is very thick and is strong enough to resist even for stronger blasters. They are very capable warriors and even the ones who never fought are far stronger than most of the creatures in the universe. There were Jedi and Sith huts as well.
It's a shame that Lucasfilm ignored the fact that the Twi'leks were already in slavery to the Hutts (as well as certain details about Ryloth) when they made TCW and continued it into Rebels and the new EU. It would've made a more interesting arc with an underlying ethical discussion: what is the difference between replacing one form of slavery (the Hutts) to another (the Separatists) and then switched hands again?

500kg isnt that much, its a rather small horse or a larger pony. I belive a shetlandpony is around 250-200kg and thats the second smallest breed of ponies. Ponies are up to 148.5cm tall and horses above.
Two that I can think of from the top of my head, would be Queen Jool from the Legacy era, and Beldorion from "Planet of Twilight", although Beldorion eventually fell to the dark side. Queen Jool was part of the Hutt Council, so wasn't exactly removed from the cartel. But she was largely a pacifistic, and her cantinas were more like big parties rather than the shady under-dwellings most Hutts seemed to be fond of. She seemed like she treated her hirelings with respect, and was more concerned with harboring a carefree sanctuary than amassing any real power. Beldorion actually was a Jedi, one of the few Hutts ever to be force sensitive. If I recall correctly, he attained the rank of Jedi Knight and only turned to the dark side after Order 66. He was eventually killed by Leia Organa in a duel between the two

My only question is how did the Hutt's even create the technology to escape their homeworld to begin with?? I mean they can hardly move without hovercrafts and help from other species how would they ever create starships capable of transporting their whole fat ass race lol
How the hell did the hutts even maintain this wealth, or better yet, how the hell did the very first generation of hutts managed to get wealthy, so that many generations of it's family tree has gotten wealthy?

In answer to your question while the early hits were physically strong and honestly pretty terrifying since they ate their opponents they rose up massive slave and droid armies to consolidate their power they then used the armies to acquire more slaves to serve them and sell and began trading in resources and commodities amassing fortunes through a vast network of gambling trade in illicit substances flesh and weapons the hit cartels expanded to take over more worlds and resources and because hurts are long lived and notoriously difficult to kill they had a long time to amass their deaths and build their criminal empires. Also if you did manage to kill a hutt the other heads of the cartels made it their business to see you eliminated wich meant youd be up against numerous bounty hunters and these slave armies. In short the hutts gained their riches and power the same way our mafias did through a combination of ruthlessness good business sence and massive conections
They got fat and lazy also according to the books Jabba had been being slowly poisoned for weeks from various sources including the food on the barge thanks to bibs fortuna and his klaptooin frogs for weeks by one of the kitchen boys, Ziros assassin Sy snoodles was also hired by Jabba and and likely he had provided her with a blaster capable of penetrating the hutts thick hide

I think I remember reading somewhere that there was one Hutt Jedi. He/She survived Order 66 (Legends, of course). How? I have no idea. How would a Hutt Jedi even work? Could they lift themselves with the Force? That'd be fun to watch.
I remember reading that hutts can move fast if they have to, able to swallow humans whole, and beat people with their hands and tails (not to mention they use blasters)
