You need 2 eggs, 50g sugar, 120g plain flour, 2 tsp baking powder, 60ml fresh milk, 45ml oil and 2 tbsp cocoa or matcha powder.
Begin by breaking the eggs into a whisking bowl and add the sugar. Whisk until they are both in incorporated evenly. Next add the milk and oil and continue whisking to emulsify the mixture.
Add the flour and baking powder and whisk to mix them evenly into the mixture. Finally add the cocoa or matcha powder to add flavour and colour to your cupcakes. Mix well until the powder is properly dissolved and you see an even coloring and texture.
Scoop enough mixture into paper cups and be careful not to fill up too full as it will rise later when you steam them. Insert each cup into a cupcake metal mold so that you can easily remove them later.
Get a wok ready for steaming. Put the cupcakes into the wok steamer and simply steam for 10 mins and presto! Delicious fluffy and puffy steamed cupcakes, all made without an oven!
