Steamed Jackfruit Cake is a delightful Mangalorean treat. Made with rice, ripe jackfruit, coconut, and jaggery, it’s a dense, aromatic cake that captures the essence of coastal flavors. The cake exudes the sweet fragrance of jackfruit and coconut. Its texture is dense, not soft like regular cakes. Each bite is a burst of tropical goodness!
INGREDIENTS
• Jackfruit - 2 cups (fresh or frozen- I used the latter)
• Boiled Rice - 1 cup (Used Idli Rice)
• Raw Rice - 1 cup (Used basmati rice)
• Jaggery - +/- 150 grams (for mild sweetness, use more if sweeter needed)
• Coconut - Freshly grated - 1-1/2 cups
• Coconut strips - ¼ cup cut fine
• Black peppercorns - whole -1/2 tsp
• Cardamom - 8-9 Nos
• Banana leaves - 1-2 to line cake tin
• Salt to taste
• Cashew-nuts/Coconut bits for garnish
METHOD
• Clean wash and soak the rice for 4-5 hours
• Grind the rice fine and keep in a large container
• Grate coconut and grind coarsely and add to the container
• Grate jaggery and add to mixer
• Add peppercorns, cardamom, salt.
• Add jackfruit and grind to a fine paste
• Add the jackfruit/jaggery mix to the container with ground coconut and rice
• Add coconut strips and mix till well incorporated.
• Line a cake tin with banana leaves and add the jackfruit, rice and coconut mix.
• Garnish the top with coconut strips and cashew-nuts
• Heat a steamer and steam the cake for 35-40 minutes or till toothpick inserted in canter comes out clean.
• Cool and cut into neat slices.
