STEP BY STEP NIGERIAN PARTY JOLLOF RICE AND FRIED RICE FOR OVER 150 GUESTS

Few things you need to note, please don't use the oil you used in frying the fish to do any other thing like cooking the rice, it will ruin the taste of the food. The vegetable oil i used in frying the chicken was what i used in cooking the party jollof rice.
I used fresh oil for the fried rice. You can keep the fish oil for another fish frying episode.
i need to clarify that I'm an advocate of pouring rice in the stew base before adding the rice to help incorporate the stew well but I'm actually an expert of jollof rice right now and so any which way. you may want to go that way so that you will just add water after you throw in the rice. This will guide you to ensure the water goes a little above the rice. when I'm cooking party jollof rice i actually have an idea of the quantity of water to use but i know you might not know as a beginner. #outdoorcooking #eventcatering #howtocookjollofriceforparty #bulkcooking #nigerianpartycooking #howtocookplentyfoodfornigerianparty
Below are the INGREDIENTS I USED
Please note that its a medium sized budget event so the meat was averagely cut
1 carton hard chicken (cut into 60 pcs)
1/2 carton soft chicken (cut into 30 pcs)
1 carton hake fish (cut into 65 pcs)
I used the ingredients below to marinate and boil the hard chicken
200g of chicken seasoning powder
1/4 cup ginger paste
1/4 cup garlic paste
3 sachets powdered nutmeg
1/4 cup salt or to your preference
3 cups chopped onions
1/2 cup curry
1/2 cup thyme
2 Cups oil
INGREDIENTS FOR THE JOLLOF RICE
22 mudus of rice (22*8cups=176 cups) take note that some of the rice burn while cooking so you have to cook a little above what is needed. Especially jollof rice. I used 1/3rd of the rice for fried rice while 2/3rd was for jollof rice.
FOR THE STEW BASE
1.5 waste basket of tomatoes
1.5 waste basket of red bell pepper(tatashe)
1/4 waste basket of rodo (scotch bonnet pepper)
1/4 waste basket of onions
STEW BASE FRYING
15000gms tomato paste
50g curry
50g thyme
2 tbs ginger powder
2 tbs garlic powder
1 handful bayleaf
100g jollof rice spice (it contains paprika, seasoning and bayleaf basically)
150g powder chicken seasoning
36 chicken stock cubes
1/4 cup salt
5 cups of chopped onions
About 3.5 litres of vegetable oil

Hmmm. Aroma Arena is just too good. Surely the best I have seen so far. Please advice on the pepper to use for fried rice. Can unripe scotch bonnet be used?

Many thanks. I usually use blended Cameron pepper. Haven't tried unripe scotch bonnet pepper. You could give it a trial. Sounds great if you ask me

Crayfish shouldn't be added to a party jollof rice in my opinion. You can add it if you're making it for your family though. I'm not a fan but I see people adding it
