I think Hudson is more important for Stewie’s story because he was the only friend that brought out that innocence in him that had been lost. Even with Brian he was expected to be intelligent. But when it came to Hudson he showed him a part of childhood that he wasn’t exposed to.
Look, I believe that all of Stewie's evil and intellectual side came from Louis' DNA, more precisely from his grandfather (Peter's father-in-law, I forgot his name). It's kind of implicit. If I'm not mistaken, Louis even has a serial killer brother and her father is proud that the family fortune originated in questionable ways centuries ago.
