Well that depends, some of the collectors who won't resell their knife are probably hoarders they collect the expensive ones, then drive the supply down so that those items will get even more expensive. Still if you got lucky to unbox a knife in csgo, it will probably be worth it than spending 70 bucks on an rng knife in valorant.

Sapphire butterfly looks better in CS, much much harder to get than in Valorant. Value of knife also stays once you purchase it, being able to resell or trade for items of an equal or higher value. Much more worth in my opinion to spend money on a knife or skin in counter strike in general.
