Stir fried Celery with Shrimp and Lily Bulb - a Cantonese Banquet Recipe (西芹百合炒虾仁)

This dish it one of my personal favorite stir fries, celery with shrimp and lily bulb. It's a bit of a banquet dish, but's easy enough to make at home as well!
The key is to (1) peel your celery before stir-frying, which makes it much less stringy and (2) quickly passing you shrimp through oil before stir-frying.
If you're a vegetarian, you can skip the shrimp and use a nice Chinese vegetable stock (feel free to ask us how in the comments).

Ultra-detailed verbal descriptions on ingredients and cooking technique, you guys definitely deserve a lot more than respect and appreciation. Wonderfully straightforward presentation along with clever cues makes learning a breeze. Keep up with more traditional Cantonese dishes, it's brilliant.

I have got to try this dish! I am an avid gardener and grow all types of lilies. I often cook with Day Lily flowers but never thought of an Asiatic Lily bulb! When thinning my beds I end up with boxes of bulbs that are small to medium sized. It may be worth the try of one or two in my next dish!! I know that they're chemical free so I must give it a go!

This dish does go unnoticed at the ye ol' round table so it's good for you guys to show a bit of love for it. Definitely underrated. Gonna try this out sometime this week. Excellent quality as always!

Yeah it's always sort of a side, but I absolutely love lily bulb so we figured we should really just do a video on it sometime. Also a dish that I've kinda found myself whipping up for a quick dinner or whathaveyou... pretty healthy and something I personally quite enjoy. A few months back I was chatting with someone about the ingredient and they asked what else could be made with fresh lily bulb - honestly, besides this dish I'm still drawing a blank. I also do a bunch of weird shit with it like incorporate it into American-style chicken and seafood salads... can you think of any classic dishes that use fresh lily bulb besides this one? Tons of soups use the dried variety, of course.

Hey guys, so a few notes: 1. So I've heard lots of conflicting reports on whether lily bulb's available in the West or not. I hope it is... I've heard it can be seasonal, but either way you can still make a tasty stir fry without it. 2. Quick note that this is (obviously) fresh lily bulb. Dried lily bulbs are used in TCM and soups. 3. If you're a vegetarian, you can obviously skip the shrimp. Replace the stock with a vegetable stock (Steph's vegatable stock uses dried shiitake mushrooms, kelp, daikon, soyabean sprouts, and napa cabbage). 4. In the Reddit post I'm gunna do something slightly different - in addition to this actual recipe, I'm going to give some notes as to how I personally sometimes make this dish as a quick weeknight meal. It's by and large super similar, so I dunno if those notes'll be helpful or not. 5. But on that note, a thing I do like to personally add to this when I'm just kinda whipping something up is fresh ginko nut. Why? No reason really, I just personally really like ginko nut and I think it works in the context of this dish (though feel free to disagree). If you're also into ginko nut and wanna give it a go, blanch in hot water for a minute and then add it in when you'd add in the chili. 6. At banquets, they often serve this in those deep fried edible baskets (blanking on the proper name for them). Apologies for not going the whole nice yards and doing that too ;) 7. Oh! Also just FYI that mild chili's getting *quartered* not just halved. My bad.

The ginko nut adds a slightly bitter taste that is a nice contrast to the other flavors. I do the same thing. Hard to find fresh ginko nuts though, usually they are packaged with their shells already removed.

Ah, sorry, should've found another way to say that. We use the packaged sort - I just wanted to differentiate between dried ginko nuts.

It's called the 'bird's nest' and is usually made with shredded taro roots.

I've done a little research, and tiger Lilly is one the lillies Lilium lancifolium. In the US, it's a common garden perennial flower, the bulb is edible.

Cheers, often the narration ends up being the part that I end up being most dissatisfied with myself when making the videos. Like... the shots themselves are functional, I'm happy with the writing, and I'm kinda getting used to the color grading/editing. But the voice work can be tricky as all hell haha

Seems like lotus root or even maybe thinly sliced jicama or water chestnut might be a good sub for the lily bulb

Yep, this dish's often made with thinly sliced lotus root too! You could also use jicama or water chestnut as well :)

You can actually use it for this dish in place of lily bulb! Totally blanked on that, gunna include that in with the Reddit post. Thinly slice the lotus root and blanch in boiling water for ~30 seconds or so. My mum has been brewing with lily bulbs on and off for a long time. She never really explained what it was, just said that it's supposedly healthy. I'm pretty sure what she's brewing with is the same thing you're cooking with. I'm learning more from this channel about chinese food than from my mum ^^;; I don't know if we have fresh bulbs available here though or if she uses dried ones.

I'd imagine for that sort of thing she uses the dried ones. Those are a TCM thing and also pretty tasty in soups :)

Though I will never be able to find lily bulb in the UK, I'm sure the celery would go down a treat. I would definitely like to see some more prawn/shrimp recipes, too.

You probably have access to the lily bulbs and don't know it. They are day lily's and common in western gardens. That's where the lily buds come from as well.

I have used the lotus lily for cooking but not bulbs like that. Not even sure where I could get them in Perth?? Would be great to try them out.

Yeah I think it might be a bit tough, feel free to sub or skip. You can also plant the bulbs IIRC, so maybe you could ask around gardening supply for the bulbs of Lilium Brownii? It'd be a wild stab in the dark, but it's the only thing I could think of if they're not available at your local Chinese supermarket.

Do people normally cook food outdoors in China? I heard people do that to avoid making their house smelly/smokey.

Nah not really, we just do it for the video to get some decent lighting haha. I think sometimes in the villages people set up a wok outside if they're cooking a big meal? Might totally depend on where you are though.

I totally blanked... can you get lotus root? This dish's sometimes made with that too (though I like lily bulb better haha). You could also thinly slice some lotus root, blanch for ~30 seconds and use that. I'm terrible at describing tastes... my best go at it was what I said in the video lol. Crisp, a little starchy, a little sweet. I don't think pearl onions would be a very good all purpose sub or anything, but I think they could still be tasty in this stir-fry? Just go easy on them and don't add too much.
