Stir Fry Quinoa with Vegetables
Prep time- 15 mins
Cooking time-20-25 mins
Serves- 3-4
Ingredients:
1/2 cup quinoa
2 tbsp olive oil
1 tbsp ginger, grated
1 tbsp garlic, grated
1 onion, chopped
1 tomato, chopped
8-10 almonds
8-10 cashew nuts
1/4 cup baby corns, chopped
1/4 cup carrots, chopped
1/2 cup green, yellow and red capsicum, chopped
1/4 cup cauliflower, chopped
1/4 cup beans, chopped
1/4 cup corn kernels
1/4 cup paneer, chopped
Salt to taste
1/2 tsp black pepper powder
2 tbsp siracha sauce
Instructions:
In a pot, add washed quinoa and add 3/4 cup water.
Once the water is boiled, cover the pot with the lid and simmer the flame and let the quinoa boil for another 8-10 minutes.
Once the water is dried and quinoa is boiled, off the flame and let it be in the steam for another 3-4 minutes.
Then later fluff the quinoa with the help of fork and keep aside.
Meanwhile, in a wok, add oil.
Once the oil is hot, add ginger and garlic and fry it for a minute.
Then add onions and let it cook till they are translucent in colour.
Add tomatoes and let them cook with onions for 2-3 minutes.
Once onions and tomatoes are cooked, add almonds and cashew nuts and fry them till they are crunchy and roasted well.
Then add baby corns, carrots, green yellow and red capsicum, cauliflower, beans and corn kernels and sauté them on a high flame for 3-4 minutes.
Then later simmer the flame and cover the wok with lid and let them cook further for another 5-6 minutes till vegetables and cook but still they are crunchy.
Then add paneer, salt and pepper and mix well.
Later add siracha sauce and again mix well and cook for another 2-3 minutes.
Finally add boiled quinoa and mix well until everything is incorporated well with each other.
Serve hot and enjoy
