Thanks for the recipe. Chef John, would it not be beneficial to blend the strawberries before commencing the first cooking step to maximise the surface area which would aid in extracting the strawberry flavour?
Do we really have to add sugar? Will it not be sweet without sugar? Actually background of my question is that I am trying to quit soft drinks and looking for alternatives which are least sugary yet delicious.
Don't throw away the strawberry pulp! You can combine it with a cup of sugar and the juice of half a lemon to make some strawberry jam! While some of the flavor has left the strawberries, a bit of sugar goes a long way into rejuvenating that flavor. It won't be the prettiest jam or the best in texture, but definitely works as a spread!
Also, if anyone plans to make this for their cravings only. Don’t boil the fruit and use the korean way instead, this is because the heat destroys vitamins in the fruits. Its okay tho if you just want the taste of the fruit.
sadly we shit and piss in clean water that if it came out of a sink it could be drunk. but for what ever reason we put clean fresh water in our toilets. why we don't use dirty water that has tons of chemicals to make it smell and look clean i don't know......
one bit of bad advice there was discard the the actual strawberries... put them in a blender with some sugar then spread them out on a fruit roll up tray and make fruit roll ups out of them in the dehydrator
He also mentioned something about "jerking." What do you do? I'm a soda jerk. What do you do? I'm just a regular jerk. And while waiting for the syrup to cool, you....
Chef John, firstly, thank you for a show that's ALWAYS funny, intelligent, delicious and empowering! I feel like I could make anything for anyone if you just did a video about it first! How long does the syrup last in the fridge? I know the sugar content would prolly be a hindrance but is it at all possible to freeze leftover syrup?
Why discard / waist the pulp? Strawberries (including the seeds) provide good sores of natural fiber. Try blending the pulp with natural yogurt and then flavor to taste with some of this yummy syrup.
Brian Kathy Maybe he meant to just not put them in the syrup? I agree though, those strawberries would still be useful for other things. I'd put them in my oatmeal with dried fruit because that would just be amazing.
Jeffrey Wong Probably not a good idea to eat strawberry "pulp" since after using it for the syrup, it becomes either flavorless or really sour, and it doesn't keep much of it's strawberry flavor.
7777Scion This video shows you how to make strawberry SYRUP that CAN be used to make strawberry soda. It’s a fantastic simple recipe to follow and no one is trying to “harsh” that fact, or change the recipe. What you seem to be overlooking, is that this recipe is for simple CLEAR strawberry syrup, which has so many other uses. Think cocktails with or without liquor, beer or hard cider. Think soft drinks such as milk shakes with a scoop of homemade vanilla ice cream or deserts such as sponges, cakes, creams, sauce, ice cream and sorbet; think breakfast such as yogurt and pancakes… in essence the list of uses for this syrup is endless. However, the implied question in my post was simply; why “discard” the pulp when it can be used as a great source of natural fiber in other recipes? Or put another way; IMHO it’s a natural, good for you, healthy, fibrous bulking agent, which can and will make a number of other dishes go a lot further at no extra cost, so why throw it away?
Brian Kathy well for the record he did say you COULD use the strawberries themselves in it by mushing them up i think through the siv but it would make the strawberry syrup cloudy .. and your soda kind of pulpy probably..if you are fine with that.. that's fine.. flavor wise shouldn't be too different..
Lesson is.... Talk with normal voice, then lower it when ur making a joke or being sarcastic. Also at the end of the sentence :)=(: ⬇⬇⬇Drop a like if u learned this lesson
Really? Soda jerks operated about 70 years ago. Today’s soda fountains are not the soda fountains which were done then- and today’s sodas are also not the same you have had then!
I wonder if I converted this to human measures correctly ========================== Strawberry Syrup (makes about 1 quart = 946ml) Original recipe from Marisa McClellan’s highly regarded Food in Jars. 2 lbs (907g) very ripe strawberries, hulled and sliced 3 cups (710ml) cold water 2 cups (402g) white granulated sugar
Joy Du parry knifes are typically used for decorative cuts or for doing what John is doing, removing scrap parts from foods and cutting up small fruits and veg, they're small so they're easier to control, if John cut himself with that (unlikely) it would show he has poor knife skills
Chef John, I absolutely love your sense of humor. Your silly quips always have me cracking up. I’m using this strawberry syrup to flavor my kombucha in second fermentation. Thanks for another fantastic recipe!
Love this! I’m making heart shaped boba-pearls for Valentine’s Day and instead of molasses or brown sugar to sweeten them, I’ll use this! They’ll be pink and wonderful
I made this some time back, i think, like back in late May-early June, it was amazing! If you happen to love those Pepperidge Farm Verona cookies (the cookies with strawberry jam spread in the center of each cookie), the jam from that brand of cookie is exactly what my attempt at making strawberry soda tasted like. I don't know about anyone else here, but I loved it!
I've made this several times. It's wonderful and so easy. I do keep the strawberry pulp. I like to add the pulp with the syrup. BTW the pulp on it's own isn't good, it has no flavor. Thanks Chef John.
I made this a couple days ago. It turned out so freaking good. I used a 1/2 & 1/2 mix for the soda though. My syrup was just way too sweet for any more syrup than that.
i'm in love with the idea of homemade soda - if only i could get my hands on some club soda - oh, the things i'd do, the things i'd do vanilla, mango, star anise, caramel, soy sauce, ginger - the possibilities are endless!
i made this a couple months ago. at first it was pretty bitter. but once it cooled and rested it was amazing!! my family loved it. it was so good on vanilla ice cream!
Thanks for the syrup recipe! I always love your recipes for an alternate way to prepare things. I cleaned out my small chest freezer and finally removed all the strawberries, raspberries, and a few (UFO) unidentified fruit objects stored in the bottom area. I thought they were really too far gone since they already had the 'protective ice' around the fruit and not sure which century they were put in there. I was sure they would taste like wallpaper paste. Nope, cooked them in big pot, added the sugars (sugar and/or honey) and added a cornstarch paste (cornstarch in a bit of water). Very tasty and lovely dark color so cooked it well until it thickened and poured into sieve to let drip then poured into Pyrex container with spout to transfer to jars. The last bit with the thick fruit I used a hand blender (or regular blender) to make a smooth thicker mix. I wanted thin and thick syrups for variety from the same batch. It all gets used. Thinner syrup went into 5 jars (250ml or 1 cup jars) for tall iced drinks and the thicker batch can be used for waffles and pancakes. That made 6 (1 cup) jars. The thinner I will use with my carbonated soda (iSi) system but can also be used for pancakes. They are all canning jars so they are cooling and will keep in the freezer. So easy to thaw one jar in fridge and use it up when I get the craving for my recycled fruit.
SatoshiAR in summer they’re really sweet, it also may be where you’re buying them from. I like to grow my own. It’s really cheap and they always turn out really big and sweeter than the ones from the store. Btw, miracle berry is mind blowing lol
You're a New Yorker, there's a soda fountain on Broadway between the LIRR tracks and Marie Street in Hicksville, Long Island called the "Sweet Shop", been there forever.............
Here's a fun fact about the old soda syrup things. The song "Green River" by Creedence Clearwater Revival is actually named after a lime flavored syrup used at old soda fountains.
Instead of discarding the strawberries, you could make them into a fruit purée or something. They might not have as much flavour as when they started but it seems a waste to just chuck them.
This video was made before your voice changed and your voice is really nice. This is when you spoke normally, like real people do. By 2024 the way you speak has taken on a whole new character, now it soars up dramatically in the middle of all of your sentences and phrases then, at the end of the sentences it suddenly drops down like a ton of bricks. Your voice used to be very pleasant to listen to but now it's incredibly annoying, so what happened? Why did you start speaking so differently? Your recipes are wonderful and so are your presentations but your new way of speaking is almost unbearable. Truly, I do not mean to offend you.
sorry chef john but isnt syrup thick! also couldnt you puree the strawberries then boil and strain them to get more flavor then again im just high lol hahhahhaa trained chef btdub
Even far back, soda was made with acids (phosphoric acid, citric acid etc) and mostly highly processed. If it comes to soda jerks, a romantic picture is pretty misleading (they also used other ingredients which are nowadays controlled or banned - in the late 1800 even cocaine-compounds), they used a lot of highly processed and artificial ingredients as well (flavor oils etc) as “artificial” was the kind of fancy! I would definitely add some acid into the mix: probably some citric acid or if you desire less processed: lemon or lime juice! Furthermore cooking the strawberries denatures the taste (taste rather jammy not fresh)- just marinating strawberries in sugar will result into a syrup which taste 10x better, and even has more vitamin es inside. For some more flavor you could add vanilla syrup (or essence).
I think Ive seen him mention before that he doesnt want to be tied down by a network. With youtube, he can make whatever he so pleases, however he so pleases, whenever he so pleases, and as long as it retains his subscriber base and gets views, he keeps making money. Around 6 figures too Id imagine with how many views he gets.
We actually had a soda fountain in one of my hometowns (Grants Pass, OR), pretty cool place, and much better than a canned or bottled soda. I assume healthier as well (for a soda) if you're just using a cane suger.
Just thought of something instead of buying flavorings or food dyes could one just get a strawberry extract /flavoring just by using the juices. At the very least i imagine you could by heating to hard crack get a strawberry lollipop. Without having to use a red food coloring or strawberry added flavoring to your candy making. Have to try sometime to know for sure though. ( seems like a home made way to get fruit flavorings and maybe some colors like pineapple would give yellowish )
What about cantaloupe juice so refreshing, I feel like there are so many juices but because they are difficult to strain or something, most people stay away from its because they are difficult to strain. But the flavor is amazing. I think their flavor could be extracted the same way.
I wanted to do something similar with blueberries but they all vanished without a trace. Honestly it’s making me really want to cry. Because it was so many blueberries. I’m pretty sure I know what happened and it makes my blood boil.
Oh, I'm so sorry that we all can't be friend! Let's hold hands and do a dance then! It's RU-vid, people are assholes, people are nice. All depends on the mood they're in. My baby cousin just died, I'm having a bad day.
