Thanks for joining me in learning how to make Warek Enib (Stuffed Grape Leaves)! Below the recipe is written out for easy reference. Stuffed Grape Leaves are easy to make and generally consist of meat, rice, and spices.
80-100 picked grape leaves, washed, and placed in hot water to soften.
4 cups rice, rinse with water
2 lbs. ground beef or lamb
2 tsp. salt and pepper
1 tsp. cumin
2 tbs. diced fresh mint
2 cans tomato paste, to be mixed with meat and rice
2 8 oz. cans tomato sauce
4 or cups or more of hot water
Place some grape leaves in the bottom of a large pot to act as a base. Stuff the leaves as shown in the video and add to the pot in layers. After each layer add some tomato sauce.
When you get to the top of the pot, cover it with a plate to weigh down. Add hot water up to the plate.
Bring to a boil then simmer covered for 45 minutes. Remove stuffed leaves to a plate to cool. Serve and enjoy!
