Best tasting chicken is when you marinade it over night. Create a sauce from spices, BBQ, vinegar or lemon juice, put it inside and outside and leave it in fridge over night. Not only it gives it a nice taste, but it lemon juice will tenderizes the meet.

If you want your chicken to have a lot more flavor then I recommend that you place thinly sliced garlic in between the skin and the meat all over. I used to do this when I made rotisserie all the time.
I seen a few clips on Brick Ovens lately, I doubt I'd ever spend money on a Professional Cooker-Smoker again, ever. Too many people throw away and the racks are on the inside of the Old Grills.
