Subtasks can also have their own subtasks, so that including the top level task, there can be up to five levels of tasks.

One difference I found, is that there's a limit to how many checklist items you can add, subtasks is I think no limit

Something that still confuses me is whether to set the date/repeat on the Task or Subtasks. I want to have a morning routine checklist, so like 5-6 things I remember to do rolled up into 1 container task. I decided on subtasks because I can expand/roll up in the Today view, and I want some Subtasks to be every other day instead of daily. But I can't figure out if my Subtasks will pop up tomorrow if I don't repeat them, but DO repeat the container Task. Have you tried something like that?

I've never tried with the subtasks but I'm using it with the checklist. My recurrent is on the main calendar (top one). The fun with that is that I can check out all my checklist and it will reappear on the recurrent day brand new to be open to check again.
