Just brilliant. Love the simplicity of tools used in your tutorials. I am all for that and your tutorials shows that you don't need drawers full of cutters and moulds to make beautiful decorations. Pastillage stay in the room for a very long time. (no fridge) If rain , keep pieces in a box, plastic wrapped

Can I use gum paste instead of pastillage for the doves?

No. Gum paste will not dry so fast that you can pock the wings to the main body.
