The chemistry behind this is simple When sugar powder is drop in thus mixture than first sulfuric acid react with it and then nitric acid react with it. Sulfuric acid, a very strong dehydrating agent dehydrates water from sugar and only charcoal ( amorophous carbon) left. Now the nitric acid, which is a strong oxidizing agent oxidize it to carbon dioxide and reduce it self to the oxides of nitrogen and water. The Carbon dioxide is colourless so its fumes is not visible in this video but the fumes of nitrogen dioxide have brown colour and therefore easily visible to us.

Those fumes would have killed him very quickly if they blew in his face. Pretty crazy to do that without a respirator or suited up if that really is Nitrogen Dioxide like a lot of people are saying. Only takes 150ppm to kill someone with that gas. It forms Nitric acid when it comes in contact with the water in your body. From there the Nitrates change your hemaglobin into methahemaglobin which is not good for carry oxygen. So you burn in large exposures and the smaller exposures kill you in a few weeks to a month.

The Reddish Brown gas evolved here is Nitrogen Dioxide. Also, Carbon Dioxide gas is released. And the blacky liquid substance formed was carbon; because sugar after getting dehydrated because of Sulphuric acid. (since sulphuric acid has a dehydrating property through which it can remove any water molecules from any susbtance and thereby leaving a black, charred residual of Carbon.) And Carbon dioxide was perhaps formd due to the oxidizing nature of Nitric acid.
