Sugar Work! 

I had the honor of studying sugar sculpture in paris and what this video doesn’t show is how painful making flower petals is! The amount of friction required to achieve the incredible shine is immense, and the only way to lower the friction is to handle the sugar at a hotter temperature. The gloves help but not much-after my first day working on petals for a few hours, I took my gloves off to find my hands covered in blisters. My teacher was so kind and put a healing balm on them. On day 2 he said probably the frenchest thing I have ever heard: “it hurts doesn’t it? Yes it hurts, but does it also bring pleasure? It’s very important that it brings pleasure. The petals must shine brilliantly!”

I love the Sugar Rose, imagine all the pretty colors one could make with that idea. Blue, Purple, yellow. I love decorations that aren't dependent on fondant or sugar paste.

This is this man's calling. It was executed so well. The flowers were so beautiful. I wonder how long I would stare at it before I brought myself to the point to eat it.

C'est vraiment un très grand maître pâtissier créateur, il maîtrise tout de A a Z, le chocolat, les pâtes, le sucre tiré, la confiserie, les entremets, les intérieurs crème + chocolat, doué aussi d'un talent artistique et créatif incroyable, sans compter son coté animateur show TV! J'ai été pâtissier 26 ans, si je devais travailler a ses cotés aujourd'hui, je serais tout juste bon a faire la plonge et a reprendre tout a zéro! Bravo Maître, bravo jeune homme, bénédictions 👍🥰🙏

I have been showing your videos to anyone who says so much as “sculpture” or “sugar” lately 😂 I can’t fathom the amount of very specific talents this man was given and how they all came together to create such beauty and wonder! There’s precision, artistry, specificity, chemistry, attention to details in nature and engineering, an innate understanding of how things work, color accuracy…a stunning work ethic, drive, and a bunch of other talents smashed into Amaury making him a true genius.

The sugar work is absolutely stunning, but doesn’t show how painstakingly difficult and time consuming making sugar petals really are. I’m in awe of your skill with your sugar and chocolate work!

This artist is showing us that there are no limits to creativity. I am not a chocolate-tier, however I can BAKE. I am inspired to try more intrecant layers, and new flavors. If I was 20 years younger, I would love to apply to Amaury Guichon’s University. What an adventure that would be!
