A great way to be able to cook from scratch summer meals is to meal prep INGREDIENTS instead of full meals. Having the protein cooked and ready to go for the next few days of meals can really cut down the amount of time you are in the kitchen.
I'm sharing a blackberry galette in today's video -- but the dough can be used for all kinds of different fruits -- we love peach in the summer and apple galettes in the fall.
Galette Dough Recipe:
1 1/3 Flour
1/2 teas salt
1 tBs. sugar
8 tBs. butter
4-6 tBs ice cold water
Add flour, salt, and sugar into a bowl. Cut in butter until small chunks. Slowly add 1 tablespoon of ice-cold water until just the dough just sticks together. Roll out right away OR wrap in saran wrap and keep in the fridge up to a week. It takes a bit more effort to roll out when it has been in the fridge, but the flakiness of the dough is much better if it has been kept in the fridge awhile.
