Mark, when you called the squash a sausage, it brought back a fond memory of Noel when she was about 4 or 5. Becky was my baby sitter. I picked Noel up one day after work and she was telling me that Becky and Harold planted a garden that day and she helped. I said you did. What did y'all plant? She said "corn, peas, and sausages". I said "sausages?" She said "yes ma'am". So all the way home I racked my brain trying to figure out what in the world is my child referring to as planting sausages? We got home and I called Becky and told her what Noel said about planting sausages. She burst out in laughter and said we planted zucchini. I burst out laughing. I just had to share that. That relish looks good!
Momma used to make a bread and butter pickle with sliced squash, zucchini would also do. So good, I am going to have to try this one, I love relishes!💞
