Baked Chickens and Rice
2 Chickens washed and patted dry with paper towels
Olive Oil
1 Lemon cut in Half
Sprig of Rosemary
1 to 2 teaspoons Salt
1/2 teaspoon Poultry Seasoning
Fresh Ground Pepper to taste
Place chickens in a roasting pan back side down. Drizzle with olive oil and rub on top. Squeeze half a lemon on each chicken and place the half inside the cavity of each. Sprinkle with salt, pepper, poultry seasoning and chopped Rosemary. Cover with lid and bake at 350 degrees F for 1 to 2 hours or until an internal temperature reaches 165 degrees F. Remove lid and let the chicken skin get toasted brown on the outside to your liking. Remove from oven and let sit to rest 15 minutes or so before cutting into pieces and placing on a serving platter.
FLAVORED RICE RECIPE:
Chicken broth poured off the chickens after they have baked
I had 3 cups broth, so I added 2 cups water for 5 cups flavored broth.
So then I added 5 cups Instant White Rice
Pinch of Salt
Sprinkle of dried Parsley
Fresh Ground Pepper to taste
1 to 2 tablespoons Butter
Bring all to a boil and stir together well. Then cover with a lid and turn down on low for 10 minutes or until the rice has absorbed all the liquid. Leave the lid on until ready to serve. Fluff with a fork.
