SUPER EASY OIL AND MILK PIECRUST, FLAKY AND DELICIOUS, SHARE WITH FRIENDS!

I share how I make my mother's easy recipe for oil and milk pie crust. No solid shortening, no cutting in lard or butter. Quick, delicious, flakey and forgiving! Be sure to see the PINNED comment with TIPS for more details.
INGREDIENTS:
2 cups flour
1/2 tsp salt (your preference)
1 TBSP sugar (optional for sweet pies)
1/2 cup veg oil (or oil of choice)
1/4 cup milk (I used 2% but any kind okay)*
Once mixed, the dough should be moist. If there is still flour at the bottom of the bowl or the pieces are dry and not blending well, add a bit more milk, 1 TBSP at a time until all the flour is picked up and your dough is moist (not wet!).
*You can substitue other liquids for the milk, almond milk, water, etc,

As with bread recipes, humidity and type/brand of flour can make a difference in results, so if it seems a little dry, add a bit more of the milk/oil mixture (tsp/Tbsp) until the consistency rolls out beautifully.

I cannot wait to try this recipe out! My daughter is allergic to dairy and nuts, so excited to find a recipe that doesn't require butter! I'll substitute with our dairy free milk of choice. My daughter might be able to eat apple pie for the first time! 😍

TIPS/BAKING INFO: Measure carefully. I like to fluff my flour in its container first so it’s not packed down, then scoop, and then level off scoop with edge of butter knife. As with other flour recipes you may need to adjust flour quantity depending on type/brand of four, humidity, etc., or if the bottom of the bowl seems a little dry, add 1 tbsp of milk or water at a time until dough holds together well and picks up crumbs. For sweet pies, I also add 1 Tbsp SUGAR to the flour mix. For savory pies, you can a touch of herbs to the mix, if desired. Preheat oven to 425, once pie is in, reduce heat to 400 and bake until edges are golden brown and center is light golden brown, about 45-50 minutes. I rarely prebake or "blind bake" my crusts, but if you choose to do so, line with double foil (hanging over edges), add weights of choice, and bake at 375 F for 25-30 minutes. Then raise temp to 425, add desired filling and bake approximately 20 minutes longer until edges are desired shade of light brown. I've used the silicone mat here, but use two pieces of wax paper, upper and lower, on top of the mat or just on table, it's easier. If you don't want to roll the crust out, you can actually just PAT it into the pie pan.

@@katiecauthen8957 Hi Katie! I've never tried melted shortening, but I don't see why not. Let me know how it turns out! My concern would be how warm it would be. Chilled ingredients make better crusts.

You are right Gramma... Two weeks ago when it was colder, no problem. Now there is humidity in the air and I needed to add a lot more oil and milk! I put together a double batch, and now I'm letting it cool in the fridge. Got to have those Cinnamon rolls!

If you ever do pie crust again, please show the shaping of the fluted edge in detail. Just talk about it in detail and spend about a minute on it. You might need someone to hold a camera close up or something. My mother never made pie crust and I never watched anyone do that in real life. I never try to do it. I just don't get it and I bet I'm not the only one. Now that I think about it, somebody's probably already made a RU-vid video about it, but I'd love to see you do it.

Glenn, I made the crust as directed, spread it with brown sugar and cinnamon, rolled it, brushed some butter on, and baked it. So awesome. You can't fail with this 151 proof recipe!

I am watching this from Bangalore, India. Pies are a relatively new cuisine here and I have learnt general baking quite painstakingly. But looking at the videos showing how to make pie crusts “oh so perfectly” with such complicated skills had not given me the confidence to try them. Thanks for posting this! Ive not seen a pie crust recipe w/milk, so I’m excited to try it. Saving time on cutting in the butter would be fab. U. Lous! BTW, coconut oil at room temperature delivers a superb and flaky crust while reducing the cutting in time. Instead of a 1:1 replacement for butter, I cut back the coconut oil by about 20 percent. That said, it isn’t as fast as your recipe.

Thanks soo much for this recipe. i cant stand using an entire stick of butter per crust, its way too much. im vegan too so this works perfect! i just melt down the Earth Balance since its veggie oils anyway :)

Wow .Before your video, I could never make good pastry. I used all sorts of butter, lard, shortening etc. I had given up. And, I hardly ever have those things in my pantry , due to allergy. Then I tried your pastry recipe, and it came out perfect. Ty Gramma

Hi Sally! Be DARING! You can do it! Lol. Sometimes it needs a little extra liquid (water is fine) if the bottom of bowl seems very dry and all the flour is not mixed in (depends on humidity, type of flour, etc), but you only need to add a tiny bit at a time until all the flour mixes in when stirred. I hope you try it and love it!

We were just at my in-laws' and the girl who helps around their property mentioned she makes a lot of pies. I told I hardly ever do because my crusts never turn out well except one that uses a TON of butter. She told me so quickly, "Oh, I just use two cups of flour, 1/2 c of oil, 1/4 c of milk, and a pinch of salt." I was shocked that the recipe was so simple and easy to remember, and I used it to make a blueberry cream cheese pie this weekend for my hubby for Father's Day. It was his mom's recipe, and his absolutely favorite dessert, but I have always avoided making it often because of the challenge of the crust. The pie itself is quite rich with the cream cheese layer without a super rich, buttery crust. It blessed his socks off to have his mother's pie! She passed away a little over a year ago. Anyway, I was happy with how it turned out, but thought the crust was a little bland. Using a teaspoon of salt as you suggested, rather than a "pinch" like she suggested, makes sense! I'll use the teaspoon next time, and I'm sure this will be THE recipe for pies for me! Thanks for sharing!!!

I have been making this exact recipe for nearly 60 years and have never had a bad crust. The only thing I do differently is after mixing gather the dough into a ball and wrap the ball in waxed paper and let it rest while preparing the filling. Roll between 2 fresh pieces of wax paper (2 fresh pieces for each crust). Before placing pie into the oven, brush fresh milk onto the top crust, sprinkle with sugar and a touch of cinnamon or nutmeg.

I made your pie crust 4 times then decided to add another tablespoon of oil....it made it even easier and baked delicious like yours but even easier to handle & move ...Love to you & yours...Judy

Great! All recipes for pie crust may need to be adjusted for the brand of flour, the humidity, etc. Tweeking it a bit to suit your needs is the right thing to do!

Sounds great but what do I do, make the casseroles, then do not bake them but instead just cover with wrap and freeze? I don't know if I can do that with out my casseroles becoming soggy messes. Any advice

I believe reconstituted powdered milk would be fine, as would almond milk, oat milk, soy milk, even water should be okay, but not quite the same. Thanks for visiting!

The first 2 times I made this recipe (December) it worked real good. Since then "every time" when I put it into the pie pan it crumbles into 30 pieces. Any ideas? Thanks.

Thank you for your question! Please see top pinned comment on the video, which includes some hints. Pie crusts are much like bread, and humidity, house air, brands of flour, etc, can affect the mix. it's good to become familiar enough with pie dough to know when it feels right, not too wet and not too dry. Sometimes I have made the mistake of REVERSING the measurements between the oil and milk, and that doesn't work very well. Be sure your dough is wet enough to pick up all the pieces at the bottom of the bowl as you mix it. Sometimes I add 1-2 Tablespoons of water (or milk) to moisten it. Do not overhandle or overmix your dough. I hope this helps. I've had very few failures and have made this dough many, many times. I hope your next attempt is a great success!

@@BanDanaGramma Thank you very much. I'll take another look at the pinned tips and remember your suggestions you included. In fact I'll copy and paste your suggestions for reference early next week. I suspect I should add more water because I had to pick up a few TBS of dough from the bowl bottom while forming the dough ball. Last night I tried a different brand of flour. I also changed from oil to shortening and used almost frozen water. I'll get back to using the oil instead of the shortening on my next effort because that's a lot easier recipe to remember without notes. I set the discs in the freezer and am having to wait to roll it out because of people calling for help with their projects.

@@lesliestyles8527 Fluff flour, Measure carefully, level off measuring cup with knife edge, and be ready to adjust if the texture seems dry. Atmospheric factors can affect the amount of oil/milk and flour you need, just like in making bread dough. If you've measured carefully, You might want to try 1-3/4 cup flour instead of 2 cups. After a few times, you'll get to know how the dough should feel to perform correctly.

We love it! Be sure to read the TIPS comment too. I use vegetable oil (make sure it is fresh and has not sat around in the cupboard too long), fresh flour, salt, and a bit of sugar. For some fruit pies I brush with beaten egg white and sprinkle more sugar on top for a crispy coating. Bake until it is lightly golden brown. It is flaky and delicious. Hi Shirley! Thanks so much for visiting! I rarely prebake or "blind bake" my crusts, but if you choose to do so, line with double foil (hanging over edges), add weights of choice, and bake at 375 F for 25-30 minutes. Then raise temp to 425, remove foil and weights, add desired filling and bake approximately 20 minutes longer until edges are desired shade of light brown.

Hi Amy! I put all that informtion in the pinned clip at the top of these comments. Preheat to 425, put pie in, reduce to 400 and bake until edges are golden brown and center is light golden brown, about 45-50 minutes. Enjoy!

Hi Rita! The mat is pliable and bendy, but pretty sturdy. I prefer to place it UNDER my 2 layers of see-through wax paper and just roll the dough that way. It worked okay as shown, but I think the wax paper releases better as long as you can deal with the seams. Thanks so much for watching and commenting!

I'm sorry your attempt did not turn out well, Sharon. Please don't give up. Try it again and be very careful measuring flour. Cooking can be fudged a bit, but baking is very scientific. I fluff my flour first, then carefully measure it and scrape excess off the top of cup. Sometimes humidity pays a part in baking with flour and you have to adjust the wet ingredients a bit. Most people are very happy with this recipe, so I would encourage you to try again. I'm rooting for you!

Hi Mariella! To prebake your crust, Preheat oven to 425 degrees F or 220 C. Lay parchment paper or foil over the bottom crust. Fill pan with beans or pie weights to keep crust from bubbling up. Bake 12-15 min until edges turn golden brown.

Hi there Bern D. Thank you for coming by! Honestly, I never chill my dough first, but it can't hurt, and might be a good thing. However, oil isn't like butter or lard that set up when you chill it, so not sure it is necessary.
