Thanks for posting this! Yrs back, when first dating my hubby .. he made me my first gumbo(Iam from CA) & used his cooking voice😂"ok now, we gonna make da roux, yaa" ... cracked me up, "what is rooo?" Yrs later, our son uses it all the time in cooking hubby's recipes❤~ Roux is so useful😊!
Usually I make roux with butter or the animal fat from the meat I'm cooking. But for some reason I never thought of using vegetable oil. That's a great idea. Also, add cold liquid to the roux. Like chef John says: ''hot roux + cold milk = no lumps''
