Super Easy Singapore Fried Hokkien Noodles 新加坡福建炒面 Fried Prawn Mee • Chinese Noodle Recipe

Today's recipe is all about cooking Singapore's signature Hokkien Fried Noodles - we Singaporeans called it Fried Hokkien Mee. Hokkien is actually Fujian, one of the provinces in China. All Chinese in Singapore originated from China and most of us came from Fujian. Along with these immigrants, came the delicious dishes that were personalised along the way to make it more Singaporean. I'm not sure if this dish is available in China but when you're Singapore, this is definitely one of the must-try dishes. You can find this in most of the Hawker centres or coffeeshops in Singapore.
The list of ingredients is listed below. Hope you can recreate this delicious dish in the comfort of your own home.

INGREDIENTS
Serves 12
Prawn stock
==========
5L of water
2 tablespoons of Ikan bilis or anchovies concentrated stock
50 - 60 pieces of prawn heads
2 tablespoons of oil
2 teaspoons sugar
1 teaspoon salt
Crispy pork lard
==========
1 kg pork lard
1 teaspoon of salt
Actual frying of the noodles
==========
Pork lard oil
Eggs - quantity to own’s desire
2-3 bulbs of garlic
2 packets of Yellow noodles (about 400g each)
1 packet of thin or thick vermicelli or beehoon
2 medium size sotong or cuttlefish
24 - 36 pieces of medium - large size prawns
300g Lean Pork - optional
Chives
Fish sauce to taste

@@spicenpans hi Chef. Awesome dish. Loved your explanation. A question though, may I replace the 2 pork for the broth with say other meat like Chicken? Possible? Any alternatives? Cos my family does not eat pork & beef

@@parthibans.s1788 you can give it a try using chicken fat instead of pork lard and a whole chicken for soup base along with prawn shelled and chicken as side meat. This recipe to add chicken, we never try before as the flavour will be not quite the same as the authentic Fried Hokkien Prawn noodles since the early 40s. But it's worth a try for certain religions.

This is my favourite dish when I lived in Singapore. I especially eat in Food Republic whenever I crave for this. Now I’m not there anymore, I miss this food so much and I’ll try to learn to cook this. Thanks for this chef!

Emelyn, by any chance would you be referring to Wisma Atria’s (Orchard Road between Ion Orchard and Ngee Ann City) Food Republic, and the Thye Hong Prawn Noodle stall? That was also one of our favorites when visiting Singapore, though the que was always long, with the benefit being that you could watch the prawn noodles being cooked in the large wok behind the glass when the wooden cover was taken off. I was surprised at the amount of broth that was used relative to the consistency of the finished dish, which was plated in the folded palm leaf scoop. Thye Hong also made some very good char kway teow noodles, and I would usually follow up a plate of either with a kopi-O kosong and kaya toast (no butter) at The Toast Box stall (though Ya Kun Kaya Toast at Holland Village was my favorite kopitiam).

@@scottmcintire8634Yes, Thye Hong Prawn Noodle! I think almost all big malls with Food Republic has a branch, & I think there are others aside from Food Republic like in Marina Bay Sands Food Court. I like all Hokkien Prawn mee in general, but I particularly love that recipe! And yeah, you can watch them cook the food because the queue was usually very long and you don't have a choice but to watch them cook it while you queue and wait 😂 and salivate.

@@DlionConceptbyEms Our daughter and son-in-law lived in Singapore for a time, during which we made four trips to visit them (plus two prior short visits en route to visit family in Myanmar). She introduced us to Thye Hong and What You Do Prata’s biryani and curry with roti paratha in the same Wisma Atria FR. Also loved the evening curbside satay vendors at Lau Pa Sat, Lor 9 Geylang Famous Beef Kway Teow, chili crab and black pepper crab at Long Beach Seafood @ Dempsey Road, Din Tai Fung’s xiao long bao’s, the tropical flavored ice cream slices between soft rainbow pandan bread from the ice cream uncle carts on Orchard Road, Banana Leaf Apolo’s red fish head curry, and other ‘very shiok’ classic Singaporean dishes. Really loved my time in Singapore! Alot of effort goes into preparing each ingredient. I love this dish, especially with fine bee hoon instead of the thicker bee hoon which you usually find in Singapore. There are only 2 stalls i come across that uses fine bee hoon - old simon road stall and chomp chomp.

Spice N' Pans I'm fortunate to live in the vicinity of that stall and I can attest that their Hokkien mee is awesome. That said I'm still a bigger fan of Kim prawn mee at eunos. Still, not complaining. Having good prawn mee is near you is always a good thing.

Hi like your recipe. Thanks for showing tips on how to fry pork fats to get pork lard and pork. But may I know how do I keep the lard and oil, do they need to be refrigerated? And how long can the oil be kept?

Hi Helen. Thank you so much for watching our video. We’re happy to be able to share our recipes so that the recipe can be around for decades (hopefully) how to store crispy lard and lard oil - we store them in room temperature. Just store them in separate containers. Crisp lard is like keropok so just store in airtight container. You can also freeze them - when you wanna use them, just airfry them. For lard oil, you can store it in any container. No need to be airtight but airtight is also fine. Just make sure the container has a cover to prevent insects and dust from getting in. You can store it like how you would store cooking oil - out in the open under room temperature. They are pretty stable. Will not spoil that easily. Hope this helps.

Hi Jia Zhen. It’s a 60cm cast iron wok. We specially got our neighbourhood HDB shop to indent it for us. Hope your neighbourhood HDB shop can do that op. Those shops that sell pots and pans. I wanna try it, but there are some ingredients that are not available here in Saudi like the pork and yellow noodles, can I replace it the yellow noodles with Korean noodles the thick one, and chicken for pork? Thank you.

Hi Ayesha, unfortunately you can't get the same taste if you replace with Korean noodles. If you can get hold of Japanese soba, that would be a good substitute. As for pork, you can omit it altogether. It won't change the taste of this dish at all. Happy cooking!

Tayab Ali Hihi. You can omit the pork. No need to replace it with anything. I would prefer no pork too.

I like your prep and finished plates...however there's so much grease/oil it's really too much for me. A production suggestion: your sound quality is fuzzy/echoing...I think you're using the onboard mic of the camera. A separate mic would bring you in closer/clearer audio. This is especially so with your accent. I think it'll help communicate your narration. Cheers.

Hi Lokman. Depending on your own preference. We like more yellow noodles than white. You can start off with 50-50 first then try from there. Happy cooking!

Hello! 😋😋 we cooked for about 12 pax so you can divide the portion by 3. Can cook a little more to settle lunch & dinner. Haha. We only have 3 people at home but we cooked for 12 to settle today’s lunch & dinner plus next day’s lunch 😜😜 Yes we love Hokkien mee a lot.

+raymond kong hmm. We cooked a big pot of prawn stock - maybe that's why you found it quite troublesome. Actually if you make a small quantity of prawn stock then the process won't look so complicated. If you don't think pork lard is necessary, that can be omitted. You can omit the Pork Belly if you don't like it. Hth

It’s usually like this and we like it this way but you can remove from the wok once your eggs are done to your preferred doneness.

Hi Roland, thanks for yet another fantastic recipe! I need to cook for 20 pax this wknd but I do not have any prawn heads/shelf to make the stock.I’m thinking of but those super tiny grey/black prawns for about 1kg to make the stock. Which means that I’ll fry the tiny prawns with shelf and boil them long time, do you think that will be good too? Separately, I’ll buy some M/L prawns for the dish. Please help. Thank you

Hi Joyce. Wow. 20 pax 👍👍👍👍 You can just use any prawn heads, regardless of the size. If you really can’t get the heads, you can also use dried Sakura shrimp or dried shrimp as replacement. One teaspoon of those is equivalent to 50 grams of prawn heads. Hope this helps. All the best to your party!
