Miso soup can be made from literally whatever leftovers you have in your fridge and that's the beauty of it! The only thing you need to buy is a miso base for the soup. I checked the ingredients- this base for miso is vegan and it's also the light version. I tried once dark miso, but not my bowl of soup. I can write you down the ingredients I used in this video, but you don't have to run to the market for this. Be creative and check what you've got right now and use it.
Cooking time ~10 mins.
Ingredients for 1 portion.
1 tiny onion.
1 spoon of miso base in hot water (the hot water I measure just for 1 bowl)
noodles (any type you like or have available)
1 stem of Celery
1 leaf of iceberg salad
First I like to cook a bit the onion on olive oil and then add hot water to it. Add to hot water a tea spoon of miso base soup. Then throw in the noodles. Mine were cooking 5 mins. In the meantime cut the Celery and add it maybe 1 min before the noodles fully cooked (that's because Celery adds bitter flavour to the water and miso is already spiced) and last but not least add the iceber salad and a bit of Celery leafs on top for your own aesthetic. Enjoy!
