Sweetie our Zucchini goes crazy also! We put it in cookies NOT peanut butter ones, but just about all others. Also in meatloaf, spaghetti sauce and even in our beans & rice or goulash.. yummy
I like to set my cranberries in hot water about 10-15 min makes them so moist, also a little almond extract to cut back on vanilla I swear it boost the taste, I've also recently studied the health benefits of nutmeg so upping that in my diet. Hope your zucchini bread turns out amazing 🎉❤
@@rochellehultsman4895 almon cranberries yes, nutmeg is no. You mention reading health benefits and I watched couple of videos by doctors talking about how Nutmeg grown and containing all the poisonous chemicals, so i stopped using it.
Yummy recipe! I wasn't able to get zucchini plants for my garden this year but I do have yellow summer squash. Im going to try it with your recipe when they start producing in my garden. Dried cranberries and walnuts sound so good. Thank you for sharing this!
Well, I used your recipe! I doubled it up and added walnuts, squash and bananas with the zucchini. I hope it comes out amazing! I’m going to make home made glaze with powder sugar and milk to drizzle on top. If they come out good I plan to give some to my family and friends! This is my first time baking any kind of home made cake like this! Excited for the outcome!! ❤
I've made it with shredded carrots, raisins and pineapple, also. I had a friend throw his loaf of zucchini bread away without even trying it because he said he didn't like zucchini. I told him he would never guess it was made with zucchini. Si, the next time I made zucchini bread, I made him a carrot raisin bread. What a goofball.
I usually have a big bowl set aside to put all of my dry ingredients in and then I'll mix them separate. Then I will use my mixer part to do all the wet ingredients. That may help get everything (dry) incorporated instead of putting them all separately into the wet ingredients. Especially when you did the flour first. I also add either dried cherries, cranberries, figs, or dates... Sometimes I even throw in some chocolate chips or butterscotch. Just depends on what I have on hand. And sometimes I substitute the white sugar for brown sugar. And instead of the cinnamon i use either apple pie spice or pumpkin pie spice.
I also noticed, she was touching her face and hair with hand she was also touching shredded zucchini with, crossed ingredients with same measuring spoon/cup, used her mouth to open cranberries... 🤔🤔 sorry but I'm just pointing out what I noticed in the video 🤷🏻♀️
This reminds me of my grandma's zucchini bread. Except, instead of grating the zucchini, she would puree it with the oil in a blender before mixing it with everything else.
Oh my that was the best bread l ever had l had same problem had squash every where huge plants never knew they where so big l bought like Eight plants l froze a lot l spent three hours about ruining my chopper lol lt was hot as h-“lol😂
I think you're missing an ingredient It's either the baking soda or the baking powder one of them you had but one of them you did not have. I was wondering why you're loaf wasn't very high. It's cuz it didn't rise because you were missing one of the ingredients.
What you mean super easy!? if you use mixer 99%used just blended all ingredients and using mixer not easy not everyone have it and not clear see what you do inside mixer
I've added 2 cups fresh mango chunks, chocolate chips and 1/4 teaspoon crushed saffron threads (that are simmered in 1/2 cup whole milk) added to the eggs and sugar..vanilla, .that all keeps the bread moist and soft..saffron gives it a golden color and a fragrant spicy flavor instead of cinnamon..I've also made zucchini banana bread with 3 ripe bananas and sweetened it with maple syrup..adding cinnamon and nutmeg with the vanilla and chocolate chips etc ingredients. so many interesting variations. with a hearty taste.
