Really tasty, healthy summery salad!
I've used spinach and mixed baby leaves for me salad, however you can mix this up with whatever you have in the fridge; iceberg, cos, romaine, watercress, rocket... whatever you fancy!
You can also change the main part of the salad, in this case I've chosen smoked salmon, you can use left over chicken from a Sunday roast, fresh ham, tuna, smoked mackerel... again the choice is yours.
You can also substitute any of the salad ingredients for ones you prefer or what you have in your fridge.
With the base preparation and cutting being the same for any ingredients you choose, there's no reason you can't make a healthy salad that takes minutes to make!
