In this video, Mr. Krug shows how to make a supersaturated solution of sodium acetate and what these interesting solutions can do.
Remember, always work safely, using safety goggles and working under the supervision of your teacher or another responsible adult.

I have one of those therapeutic chemical heat packs, and when it’s in liquid state, you pinch a spot on the pack, which starts the reaction. You can watch the crystals forming, the pack heats up to use as a heat pad. After you use it, you then boil the pack in a pot of water until the crystals re-dissolve. After it cools down, it’s ready to use again. I’ve been using it for over 10 years, and it still works!

Is this a chemical reaction? A phase change? Or separating a mixture? Please advise.

Hi Sean, (1) This does have characteristics of a chemical reaction. Although crystallization of a solid from a solution is a physical change, we are also forming an ionic bond (chemical bond) between the ions of sodium and acetate. So we can make a case that this is a chemical reaction, while we can also make a case that it is a physical change. Neither would be incorrect, chemically speaking. (2) Not truly a phase change. We are going from an aqueous mixture (specifically, an ionic solid dissolved in water) to a solid with a little water present. (3) Definitely separating a mixture. The aqueous mixture contains sodium acetate and water, while the 'crystallized' version contains solid sodium acetate with a little liquid water.

In this demo, I used safety goggles and a lab coat/apron, as I do in all my demos. Sodium acetate is not especially corrosive, so gloves are not really necessary for this demo, although if someone wanted to use them, that would be fine. In my many years of experience, using gloves when they aren't really necessary leads to (1) excess waste of polymers/plastics, and (2) more risk of slippage between your hands and the glass beaker -- esp in the case of reusable gloves -- which increases the risk of dropping the beaker and having an accident. As always, if you touch the 'seed crystal' with your fingers, wash your hands afterwards. Thanks for watching!

Hello Mr Krug, I cannot get this to work. I’ve tried multiple times. I get the sodium acetate to dissolve and set it out to cool on the kitchen counter. Our house is 76degrees. It crystallizes before it gets to room temperature. What am I doing wrong? How can we make it work. My son chose this topic for his 6th grade science experiment and I though it would be great because he could do it independently but he tried so many times and got frustrated so I tried to with the same (poor) results.

A couple of tips... Make sure you're using distilled water. Tap water has enough impurities that this likely won't work unless you use distilled water. Also, make sure that your beaker is very clean. A dirty beaker might have impurities that could dissolve into the water and keep your solution from getting to the supersaturated point. Just a couple of thoughts. will it only dissolve with distilled water? cuz i've seen few videos which tell that distilled water will only work.

You can use tap water, but due to the impurities in tap water, you might not be able to dissolve the full amount. This is why I recommend distilled water.
