I’m 69 years old and have been making fresh Polish sausage since approx 6-7. Obviously helped my Mom. The recipe came from my Great Grandmother from Poland. The hand grinder was the main equipment used until I purchased an electric grinder about 10 years ago. I’m a retired Chicago Fire Dept. paramedic. There was a time when I had a partner from Poland. He came here with his mom. His father played for the Poland soccer team that won a medal in the Olympics. I gave him some of my fresh Polish sausage at Christmas. The following work day I asked him how the sausage was. His answer was my mom cried because it reminded her of the sausage she had in home country.

Granddad was a sausage maker. In the 60's was my job to crank the cast iron grinder. Continued through the 70's with my Pop. Finally bought Dad an electric grinder in the 80's. Continued to today wearing our 2 kitchen aid mixers and 3 different grinder attachments....have a 2 year old grandson now. Hope he continues after I'm gone....

I also started out in the 60’s. My first job was helping scrape down the hogs after scalding. As time went on so did my responsibilities. I still use my grandparents cast iron enterprises stuffer. At 102 years old it’s still going strong.

I started sausage making about 7 yrs ago. I received a Sausage Maker vertical smoker as a gift and a 5 lb dedicated stuffer. Since then I have enjoyed making several kinds of sausage to include experimenting. I'm a novis at this but love it. I look for excuses to make sausage. I collect recipes from Two Guys.

On the subject of acidity in the sauce i'd recommend using a yellow variety of tomatoes as well, as they are much less acidic and have a mild flavor that goes well with many spices. they makes a great sauce

My grandpa was the sausage maker in the family. He is long gone and I miss his venison summer sausage. That will be my first this weekend.

My sausage journey is just getting started. We have been raising our own pigs for about 3 years. What we wanted was a slow-growing, heritage breed. We settled on the mangalitsa. We started with two piglets for breeding. The day I went to get them, I found another place selling Duroc by old spot crosses. Since then, the mangalitsa have grown and had 1 liter that all died and a 2nd where only 2 survived. We have been selling the Durocs. But we just butchered a Duroc and mangalitsa 6 months ago. We made 3 batches of different flavors of bratwurst and 1 batch of blueberry and maple breakfast links. I do not have a stuffer and I will not make any more sausage until I get one. We have a Weston #32 butcher series. It has the stuffing attachments, but Eric you are not understating at all, that does not work very well, especially when stuffing 75 pounds of sausage. I like the blueberry maple links the best. The meat got too hot in the grinder and is kinda grainy and dry, but it is good enough to eat.

I love watching your videos and revitalizing my interest in making sausage. I helped my grandpa and dad cold smoking and hot smoking breakfast sausage, summer sausage, and fish. I also stuffed everything from a horn to an old cast iron stuffer. I am excited to share those methods, stories and heritage with my family.

We made up 2 Sausage recipes today: 1. The Supreme Pizza Sausage and I used my homemade Pepperoni which Turned out Awesome. The BOSS (AKA the wife) LOVED it as well. 2. Jalapeno Popper Sausage with 4 Cheese Mozz/Chedder/Parm & some homemade Herb and garlic Cream Cheese. It turned out Awesome as well. Over the years we have made up a lot of your Salami recipes they all turn out Awesome as well. Thanks, Eric, and keep up with the AWESOME Vids and Recipes. Cheers 🍻

Started getting into sausage 10years ago making Kielbasa and explored other types from raw to smoked. The most trouble I have is finding an affordable cold smoker that does a quality job and curing. I really need to build a curing cabinet and start expanding my capabilities and learn more about fermenting and aging both whole muscle as well as salami. This channel offers an amazing amount of valuable and reliable knowledge. Thank you for that!

I was a culinary instructor for 30 years and have made some loose sausage. Since retirement I've been working on my sausage skills but I lack a lot of the specialty tools. But my English banger sausage is pretty darn good. I could use this give away!

GREAT TIP using baking soda in the tomato sauce to increase the pH! Thank you for adding another tool to the sausage making technique! Another good reason to have an Apera meter too, not just for fermented sausages!

Around this time . I make sausage for my family . We sit down and choose the recipe they would like for the year . It could be bangersto panamian to German to Polish . With each one of them I 'm making up to 30 pounds of different sausages. I enjoy the hobby and it is work. I get them to help some time myson in law got a deer and he wanted it made into sausage. Weused one of your recipes for venison sausage came out great. Learning about fat percentage make a big difference for venison thank you Erik for sharing your knowledge.

During covid, we made the move from a major city to a rural ranching, mountain community. I purchased the tools needed for home processing last year and began watching your channel and Chuds. Were trying to be more self sufficient; canning, hunting, fishing and buying local. Love the education you are providing so we can all become more proficient, confident and daring in our meat processing journey!

Once i saw the damage covid restrictions were causing in our children and the chaos in the world, I knew i had to find a place where my family would be safe and thrive, similar to what I had growing up. That looks good! I've be making sausage for 35 years closer to 40 years! However I can alway learn something new! I owned and operated a custom butcher shop before losing my vision to glaucoma! I still make my own sausage! Cured and smoked tons of bacon, hams and Summer Sausage during hunting season!

I’m a intermediate beginner at making sausage. My favorite is the Texas Hot Link. It also gets the most request from my friends. My favorite snack sticks are the Honey Sriracha made with venison.

A pepperoni/pizza sausage would be good anytime. I used to love pizza burgers so I don't see why this wouldn't work.. I just make sausage patties so a scale and a lesson in sausage making would solve my biggest problem. Hoping to get the smoker too, that starter kit would go great with it .

I've been making sausage for about 5 years. Cold smoked, cured mettwurst is what I've made the most of. I made your Landjager sausage last year and absolutely loved it! I will be making it again this winter. I also do some snack sticks each year after deer season. I order all of my casings from "The Sausage Maker". I would love to win these supplies!

Made my first batch of cased sausage a week ago. 10 pounds of Jalapeño Cheddar and 10 pounds of Hot Guts. I would probably not do such a large batch at the same time again. Maybe on or the other. Hardest part was getting my BGE to maintain low temps for extended periods of time. Lots of experimentation. Love this channel.

So I've been doing sausage for about 14 years I started out with wanting to recreate the Texas sausage that I was getting in the road houses in Texas while I was doing some work down there. That got me started and I've now progressed through all levels and types and am enjoying the adventure. I'm not a big fan of knock off flavored sausage but this looks amazing and I'm going to have to give it a go. Thanks for the heads up on the Tomato sauce. A big thankyou for all you have done this season it has been great.

I just use the Old School Counter Clamp On Manual Grinder, it’s my mom’s. She used it when she made Italian Fig Cookies!😊

I guess I’ve been helping make sausage since I was a little kid, my thumb fit in the funnel lol, but I’ve only been making proper sausage for about a year, Ive learned everything from you, I’ve studied your technique and bought most of the equipment you have, what a difference in how I use to make our family sausage recipe, and how I make sausage now, I’ve made a good variety of your recipes, the kielbasa recipe was awesome, but my very favorite sausage to date is the Texas Bowl of Chili sausage, it did take me 3 days to make them, but man they are so unique and flavorful, I still have 2 vacuum seal bags of the chili paste in the freezer. Thanks for taking the time to make these videos and explain every aspect of your craft with care, you’re not only great at your craft, but you’re also an amazing teacher. Thanks again for all you do. 🙏🏽

I've been doing sausages for about a year at this point and I have a lot to learn and a lot of experimenting to do. I currently use a MEAT 0.5HP grinder and a dedicated 5lb sausage stuffer from Hakka. They work pretty well. I smoke my sausages on my pellet grill and use a smoke tube to help the smoking process along without increasing temps too high.

I'm watching this with my kids and they decided we are definitely making this one this year... Last year we made some very basic sausages, Italians, brats, and maple breakfast links. This year we are doing some exciting fresh sausages, and salami and trying a few whole muscle cures

I started making sausage for a couple of years now and found your you tube channel back then and have been a big fan of your channel since then. I started out like lots of folks using a kitchen aid mixer but that got old fast LOL I managed to to find some second hand equipment and am totally hooked on making sausage.

I’m a novice, I’ve made a couple sausages following recipes from RU-vid. The most trouble I’ve had is stuffing. I’ve been using my cheap grinder and need to get a stuffer before my next attempt. Love your videos.

Thanks again for sharing these recipes. I was gifted an old commercial #32 grinder years ago, it weighs a ton. But now I use a #12 grinder that's more handy to move around .

Pizza sausage! That's awesome! I will have to try that. My experience is mostly fresh sausage and some Smoked. I used to have difficulties loading the casings on the horn. Now I add baking soda and have no problems 😁. Thanks, Eric!

I started making sausage with my parents about 15 years ago, even though I don't do it very often. I make breakfast sausage most often, but I've made kielbasa and Italian sausage as well. I've also made fermented pepperoni and sopressata that turned out great. Making smoked sausages have been the toughest for me, due to my having a small smoker, but I've remedied that. Thanks for taking the time to teach us!

I just us a gas grill and smoker box for my smoking. Doesn’t work as good as a dedicated smoker box, but it works good enough for me. With practice I’ve become pretty good at it too. All sorts of ways to do it.

I do enjoy cheese in sausage - you do have to be careful to not overheat regular cheeses though. I have been making sausage for about three years now and enjoy it quite a bit.

Pizza Pizza! I've been making sausage since COVID. I saw an ad for the Dry Aging sheets, and stumbled upon your RU-vid channel. Wow!.. were my eyes opened! I'm pretty sure I binged every episode on the channel at that time over a couple weeks. The rest is history, thanks for bringing us along on the ride.

Started making sausage about a year ago. Have made breakfast sausage and spicy Texas sausages for brat style buns and all.

Start about 7 years ago doing summer sausage and snack sticks but this year I have done 150 lbs of brats and smoked sausage

I've been making sausages for around 8 years and I have gone from kitchenaid grinder to dedicated stuffer and grinder and I have made fermented sausages. My one hang up is drying sausages, I don't have a dedicated chamber yet. I will definitely try this supreme pizza sausage

been making sausage for many years, but started with very humble equipment. Favorite sausage to make is Cajun Andouille, but that's because it's very hard to find up in Canada. Even finding ingredients up here can be challenging like cultures, certain binders, etc.

I've been making sausage for over 20 years and still learning ways to make my sausage even better. The very first year that my friends and I made sausage after hunting season we did over 1,000 lbs. This was all done with a #22 hand crank grinder, an old refrigerator that we made into a smoker and recipes by Rytek Kutas. Still have the book.
