I was lucky enough to be invited to eat this level of sushi once in Tokyo. I can assure you, it is exceptional and unforgettable. The respect for the product is total and the know-how is impressive. The smallest piece of chive or other is treated like fine gold, not to mention the gesture and the beauty of the utensils. I was dazzled. It is art. You are immersed in beauty, literally.
He's not a chef master. He's a Professor. Never seen before a so kind art of composing food, gentle use of tools, nice presentations. This could be absolutely the best and healthy version of food, both for taste, beauty and tradition. The top, I suppose
Putting on the Ritz. As a photographer I can really appreciate the beauty of these various fish cuts. Many of them have an appealing texture that almost looks like a crosshatch that the chef cut.
i feel like their culture values diligence in the smallest of details in nearly all aspects of life. if you look at their food, engineering/technology, art, homes, and so much more, you notice how much they pay attention to the details. they sweat the details because that manifests as love and care.
I have never eaten sushi in my life, my parents were mostly beef, chicken and pork cookers; rarely would we eat shrimp or fish but fully cooked. I have been really interested in trying sushi for my first time; it looks so delicious.

It is an expensive meal!!! I’m guessing it is around $500 USD or more. A nice dinner at Ritz Carlton Kyoto is around $213 USD, without drink. I looked at Ritz Carlton Kyoto menu. I did not find this dining experience on the menu.

Somebody said $45 reasonable for Ritz Carlton! This is edited I’m sure. At least it takes an hour when the chef makes nigiri sushi one by one. You’re only watching it. If you taste it I’m sure it’s just exquisite !!! Because this chef is an artist!
