Sushi Rice
(serves 6)
Ingredients
2 cups sushi grade rice (it will make approximately 5 cups of cooked rice) amzn.to/2kQrWIL
For Sushi Vinegar
Palm size kombu, dried seaweed amzn.to/2kKKTg8
1/4 cup rice vinegar
1/4 cup sugar
1 1/2 tsp salt
1/3 of fresh lemon (approximately 1 tsp)

You got it right with the kombu, I used to work at Zuma in Miami and we always put the kombu in the sushi vinegar. Although we went through 4-5 gallons a week. Love your videos, keep up with recipes.

So I live in Canada, and when I got to the ''cooling the rice'' part, I simply put the bowl full of rice outside for 4 minutes in the snow.

After washing rice put finger in rice, touching bottom of bowl. Measure rice using thumb on index finger. Double that measurement on index finger and add water to that line. This is how my Japanese grandmother taught me to make rice 60 years ago. You never need a measuring cup. It works for any amount of rice.

At this time and age anyone who eats rice as staple and does not have a rice cooker is lame. Having said that, I always use 1 to 1 measure of rice and water and my cooked rice is always perfect. Some likes the ratio 1(rice) to 2 (water) the result is still go. I like my rice firm and not mushy and as soon as my rice cooker signals that rice is done, I fluff the mixture immediately while still hot which makes it stays fluffy even when it gets cold. Don't shun the rice cooker, remember who invented the rice cooker, the JAPANESE.

I place my index finger on the surface of the rice then make sure the water goes to the first line. This is what my parents taught me lol

The thing about techniques like that is that it works great when you are always cooking the same amount. But if you try to double or halve the recipe its going to be a bit off.

My American parents taught me to just do it by eye. Always worked perfect. It does still hurt when I pop it out of the socket though.

I cook rice by using my middle fingers! The finger has like 3 straight lines and then put it on the rice and yeah sometimes if I cook little rice I make sure the water is only half of my 1/6 of my middle finger and when I cook alit of rice I just adjust the water more! ❤️

I usually make batches of rice (in a rice cooker) using 2.5 C. of rice (usually jasmine) and add a little more than 4.5 C. of water to it. I know a lot of (non-Asian) chefs quote a 2:1 ratio of water to rice, but I find that usually results in wet rice. Same if I use the first joint of a straight vertical finger as a water depth gage, though, even though that seems to work a lot with most of the Asian cooks I know.

Mommy Tang showed the knuckle way to measure the water when making rice also. I'm still too nervous to try it but I'll give it a go next time. And I also have had a Cuckoo rice cooker on my wishlist! I'll break down and buy one eventually.

At my previous work place they were adding rice vinegar + white vinegar +apple , lemon, lime juices + sugar and salt maybe sounds crazy but flavor was amazing

I always use a rice cup to measure and after washing and pouring out as much water as I can, add exact same volume of water and it Always works for short grain rice!! :D

shahram72 it speaks korean lol... but you can get japanese brand ones that do the same thing, but speak japanese (can also set them to english!).

Hi! Every time I try and cook sushi rice, short grain or labelled sushi rice, it always turns out syrup-like around the rice grains, even when I've washed it until it runs clear. I've tried cooking it in a pot on the stove and in a rice cooker and it still turns out the same, do you know what I might be doing wrong?

When cutting with speed, how to cut or what to feel so rice not be broken ? It appears that the spatula is brushing top of rice with bottom of spatula rather than the side edge of spatula cutting into rice. Thanks !

Cuckoo is our family's favorite rice cooker. My mom uses it, my sister uses it for a long time! It's electronic pressure rice cooker so rice texture is amazing. (Koreans love rice cooked in pressure cooker) The wooden bowl I got form a local Japanese grocery market.

Can you tell me why I have a clear film at the edge of the rice (in the bowl) after the rice is cooked? I use a rice cooker. I wash the rice till the water is clear just like you said... anyone knows what causes that film?
