Ingredients:
- Chicken- 300 g
- Salt- 1.5 tsp
- Bay leaves- 2 nos.
- Garlic cloves- 4 nos.
- Ginger slices- 4 nos.
- Onion- 1 small size
- Peppercorns- 10 nos.
- Water- 2 liter
- Corn- 250 g
- Pepper powder- ½ tsp
- Corn flour- 3 tbsp
- Spring onion greens- 2 tbsp
- Egg white- 2 eggs
Preparation:
- To make corn slurry mix 3 tbsp of corn flour with 3 tbsp of water
Process:
- Add chicken on a pan with salt, bay leaves, garlic cloves, ginger slice, onion, peppercorns and water. Turn on heat and bring to boil. Cover and cook 30 mins on low heat. Drain to separate stock and shred boiled chicken
- Add water in another pan and bring to boil. Add corn and cover and cook 15 mins on low heat
- Blend half cup of the boiled corn kernels with half cup of chicken stock
- Pour rest of the chicken stock in a pan and mix blended corn. Add shredded chicken with rest of the boiled corn kernels
- Add pepper powder with salt and stir to mix. Cover and cook 6-7 mins on low heat
- Add corn slurry and cook 2-3 mins on low heat
- Add spring onion greens and give a mix
- Pour egg white from height and stir continuously. Cook 2 mins on low heat
