I actually knew a guy named Lalo. He was an employee/manager/part founder of a Mexican restaurant I went to since a baby, and still frequent to this day. He was an older gentleman and was so unbelievably kind to me. He has always left a permanent mark on my life and I will always respect him for that. He moved back to Mexico in 2015 by choice, and I haven't seen him since. I hope he is doing well.

When you fold over the tortilla put a tooth pick threw the top of it to hold it together and closed. Then go up to a flame grill and slowly crisp each side an 1000% better results. Brings out the flavor and cooks the onions an peppers.
